Once again a beer appears on the CBC menu which firmly expresses your iconoclastic brewers’ commitment to fly in the face of tradition, and boldly mess up the mainstream. Cerise Cassée is a complex beer in both process and palate. It begins with a unique, 3-day long sour mash of 100% of the malted barley. This very tart wort is fermented along with 300 pounds of sour cherries by several strains of CBC beer yeast, then sent downstairs to the secret dungeon – er, barrel cellar, where it ages for one year in French oak wine barrels (Pinot Noir and Chardonnay). Here it undergoes yet another mysterious process as a final long, slow fermentation takes place with microflora such as Brettanomyces, Lactobacillus, and Pediococcus. Don’t let those things scare you, though, because these barrels and wild beasties of beer contribute a smoothness and significant complexity which could otherwise not be attained by “traditional” modern brewing methods. The resulting tart, amber-red ale, effervescent in its flute-shaped glass, combines aromas and flavors of sour cherries, malt, vanilla and oak tannin, and a finish that defies description in its funky-yet-balanced uniqueness. Please enjoy this beer while watching the dividing walls between tradition and innovation, between the common and the most challenging, even between beer and wine, crumble to dust as did the walls of Jericho under the breath of Joshua’s horn. Simply sour cherry nose. Ciderish appearance. Sour cherry with a balsamic finish...would make a nice salad dressing :) Really great tasting, just not so much for beer. Notes: Beer Advocate Belgian Beer Fest ’09

Cerise casee is French for "popped cherry", and this would be a hell of a way for one to lose their s (sour) - card. Mahogany pour, aroma of tart cherries and vinegar. Intense cherry flavor with notes of chocolate. Highly acidic, like drinking a sweet and flavorful vinegar. Almost. Delicious, but a bit much.

5 fl. oz. on tap @ CBC. Pours clear ruby red with no head. Aroma is sour malts with loads of cherries. Flavor is sour malts, cherries and some fermented berries. Really good.

Pour from bottle at What the Funk!? 2014. Appearance is slightly hazy amber with a frothy cream-colored head and great lacing. Big vinegar, green apple, oak, tannic, ripe cherry skin, and grape in the aroma. Taste is cheesy, waxy, oaky, orange juice, lactic, and vanilla with a huge sour finish. Way too sour and acidic. Slick mouthfeel with medium carbonation. Way too many off-flavors and aromas to be enjoyable.

Bottle @ What the Funk Denver 2014. Dark orangish brown appearance with a tan head. Black cherries, caramel, oak, and tannins in the nose. Fairly funky and tart flavor. Quite a bit of vinegar / acetic acid on the finish. Decent cherry flavor but kind of hard to drink. I didn’t enjoy this one as much as some of the others I was drinking with during WTF.

Had on tap at the source for $6. To short-stemmed tulip, it pours a mauve-hued blood red, sustaining a bubbly, off-white ringed head barely even a fingernail in length. Aromas of Oregon Pitted Dark Sweet Cherries (can), duck fat, candied limes, salted caramel, plum skins, toffee, peppercorn, booze, and milled corn. Tastes of everything described above with the addition of cough syrup, funk, lipstick, young, oak, and rubber by mid-palate. Mildew, ginger ale, and maraschino cherries by swallow. Was indeed sugary, but the funky and bittersweet undertastes had saved this ale from being too drastic and weird. I would have this again.

Pours hazy dark brown with light off white lacing head. Aroma is dominant with sour fruit, slight cherry and oak, and a light hint of citrus. Flavor is outstanding, medium sweet, overripe fruit, cherries, and acetic tannic finish. Amazing beer. I would definitely have more of this again.

Pour on tap, hazy reddish pour with thin off white head, aroma brought big cherry, cherry juice, a bit sweet but overall not bad, nice lemon, vanilla, crackery notes as well, slight hints of funk even. Taste is cherry jam, some slight medicinal qualities, touch of cracker, biscuit, bread, nice sour lemony notes, touch of funk, finishing bitter, slightly sour.

On tap @ GABF. Dark amber pour with a small khaki head. Nose is dominated by cherry and sherry vinegar. Red wine, oak, grass, and lots of lemon. Very sour flavor. Lots of lemon juice, sherry vinegar, and tart cherries. Green apple, oak, and red wine.
