COMMERCIAL DESCRIPTION
Created in celebration of the Winter Solstice, the longest night of the year, and to greet New England’s gradual awakening to longer days and (hopefully) diminishing cases of Seasonal Affective Disorder.
Darkest Night is a rich, deep, dark beer with garnet highlights, aged with Spanish cedar wood. Aroma and flavors are a balancing act of caramel and roasted malt, supported by subtle spicy notes from the wood of sandalwood and allspice. On the palate that balancing act continues with interplay between malts and hints of sandalwood, white grapefruit, and cinnamon/allspice character from the cedar wood. Smooth in the finish and lingering softly on the palate, this unfiltered and full-bodied ale is a small-batch special brew from your friendly neighborhood brewers to be savored over the holidays. nice pint of this on a cold day was just what the doctor ordered. What appears as a deep black color reveals some reddish brown edges in the light. A one finger flight creamy head crowns this beer. The aroma was a nice maltiness with a bit on cinnamon and another sweetness that made me think of bananas. The taste once again had that cinnamon quality but that was taken over with a tobacco and smoke finish. A fairly light body on this as well. Just right for even paced drinking.

Draft at EBF. Pours a mahogany body with an off white head. Aroma is slightly similar to and english bitter on cask with woody notes, bitter hop tones light grapefruit rinds. Has a nice cedar character with just enough spices to make this really stand out. Very nice.

Tap at NOTB. Pours a deep ruby amber near brown with a foamy lasting head. Aroma is earthy, spicy, light citrus notes, earthy woodiness- cedar is apparent, and a spicy tea and hints of smoke and caramel malts. Flavor is nutty, light chocolate with a lot of spice but doesn’t get too out of control- cedar and white pine sappiness, citrus notes, herbs, and floral notes of hibiscus lavender, and even some violets- earthy spicy and almost leathery in the finish- slight bitterness, doesn’t get too astringent from the spices and herbs. Nice.

Poured from the tap into a pint glass. The color is a nice dark black with some ruby hues when held to the light. There is a brownish foamy head that is about a finger high and leaves a light lacing on the glass. The smell is some nice caramel malt flavor. Some cinnamon flavor hides behind some hoppy crispness. The taste is some nice burnt malts that give a slight smokey feel to this beer that stays just for a moment then leaves to bring on a molasses and caramel flavor. The feel of this beer is evened out between a high carbonation feel and some crisp feel.

A deep dark brown ale with a thin lacing brown head. In mouth, a sweet burned caramel, with light spices, cinnamon, and maple. In mouth, a good sweet chocolate malt with developping hops bitterness, roasted nuts, light ginger, quite nice, medium bodied. On tap at brewpub, Dec. 28 2009.

Draft at brewery. Pours a dark speckled brown color with a big foamy khaki colored head. Nose is dark fruits with some chocolate notes, raisins, plums etc. Palate is full bodied with a nice fizzy touch to it. Flavors of raisins, some spicy notes, chocolate. Very interesting and enjoyable.
