COMMERCIAL DESCRIPTION
This beer represents a new venture into the world of beer and mystical experience. Contemporary theories of sound therapy are incorporated into a process which aligns this Belgian-style golden ale to the specific frequency that is expressed in meditation circles by the mantra "OM.” While resting in French oak chardonnay barrels for six months, the barrels and their contents were vibrated using therapeutic tuning forks and Tibetan chanting bowls at a frequency of 136.10 Hz @ 432.10 Hz. Studies have shown that vibration affects the crystalline structure of liquids and that water has the ability to 'memorize' frequency information and hold sound at nearly five times the magnitude of air. From Plato to Pythagoras to Kepler scholars have experimented with ways in which we define the sound of the universe and how it is relative to our own existence. Our process created an optimal environment, also, for the naturally residing microflora in the oak, bringing into the beer subtle expressions of Brettanomyces which complement the beer’s dry but malty palate with flavors and aromas of pineapple and peach fruit. OM expresses a truly harmonious balance of honeyed malt and hop, yeast and flora, and oak character, with a final stated goal of assisting humanity in its quest towards inner bliss, equanimity, and world harmony. Oh, and it’s delicious.

Sample at NotF. Pours a light cloudy yellow color with a foamy white head. Nose is lightly fruity with clove and banana esters. Palate is lightly fizzy and clean. Flavors of toasty malt notes and yeast with a light hint of clove.

In short: A fruity, slightly acidic, moderately-wild (barnyard/bretty) and very hoppy beer. Complex and refreshing. Kick-ass.

The look: Clear blonde body topped by a small off-white head
In long: Very fruity with pineapple, peach, grapefruit. A light-medium brett-like presence gives a subtle but very enjoyable wild character to the beer. Barnyard feeling. A lot of grassy fresh hops. Strong tartness with a medium acidity. No alcohol presence at all. Very complex. Highly refreshing. The whole thing feels like a fruity acidic Bière de Garde. Very nice. Named after a mantra, a ritualistic simple sound that one repeats over and over according to his/her own personality. Mine is burp.

Draft at EBF. Pours a light golen body with a a creamy head. Aroma is sweet malt, citrus, banana, and belgian yeast. Flavor is that with little etoh expression.

Draft. Clear deep lemon brownish color. No activity/static. Tomato, V8 initial aroma. Celery, spicy, tabasco-like . . . am I drinking a Bloody Mary? :) Fruity pineapple, spicy flavoring. Very interesting. Pleasing. Nice go.

(Draft) Pours a lightly hazy golden body with a medium off-white head. Aroma of coriander, sweet citrus, apricot, pineapple, mustiness, banana, sweat, and light horse blanket. Flavor of sweet citrus, honey, light herbs, funkiness, and candi sugar with a semi-dry oak finish.

EBF V NOTB. Sort of a wit/tripel/strong ale hybrid it seemed to me. Banana, wheat, citrus, apricot, apple, probably more, no reason to distrust that pineapple and peach weren’t there too, all nicely balanced, never gets overly sweet. My notes don’t really specify what was in the nose and what was in the flavor, but I do know that after not being sure what to expect, I was very impressed by this brew. Maybe there’s something to all this meditation/vibration stuff they talk about.

Extreme Beer Fest 2/15/08: A robust golden/blonde ale, more like a tripel. Taste of Belgian yeast, banana, wheat, apple, sweetness. Very light, you couldn’t tell this was a 9.4% abv. A good brew.
