COMMERCIAL DESCRIPTION
Saisons (pronounced say-zones&) are refreshingly crisp beers traditionally brewed in the French-speaking, Southern part of Belgium known as Wallonia. Known as farmhouse ales thanks to their house-brewed production, they were originally brewed in late winter for summertime consumption, though they are now year-round standards at the family table.
Saison du CBC is an unfiltered, bright yellow-orange color from the malt grist of Belgian pilsner, aromatic, and wheat malts. Although highly hopped by Belgian standards, the German Hallertauer and Tettnanger hops in this beer make a milder contribution than standard American-grown hops. Tart fruity, spicy notes in the flavor and aroma come from the use of our proprietary Belgian yeast and a subtle combination of spices, also traditional in Belgian brewing. Those astute of palate may notice flavors of orange blossom, coriander, cumin, black pepper, and star anise, as well as an herbal hop note or two, blending beautifully with the lightly toasty, sweet malt character.
Served in a traditional tulip glass to emphasize the glowing effervescence and special nature of this delightful beer.

Pours a cloudy golden color with a thick, bubbly, white head. Aroma of pepper, yeast and leather. Flavor of pepper and yeast with a mild sulfur presence. The body is light and the carbonation is moderate.

Draft. Mustard yellow in color. 1/2" head. Grassy, yeasty but not overpowering. Not bitter or tart. Not exceptional or noteworthy. Not getting another look from me but solid. Sampled @ BCTC 2007

Draft at BCTC 2007. Around 25% opaque orange and burnt gold body with a white head.Sweet fruity brettanomyces in the nose, with some fruity melon and yogurt yeast scents. Wet, slick, not too flavorful up front, a tad plain overall, finishing lightly sweet with a crisp bite and your basic Belgian golden ale malt/yeast/lemon/light spicy flavor.

[BCTC 07] Poured a hazy dark golden color with a medium sized, off white head that left light lacing on the glass. Aroma of flowers, earthy yeast, citrus fruits, lemongrass, toffee malts, and coriander. Taste of citrus fruits, light honey, toffee, a bit of yeastiness, with grassy hops, and a bit of lavender in the finish. Spiced, not overly so, and fortunately I don’t believe they used anise in this newest batch... I didn’t detect any, and i’m pretty sensitive to it.

Tap at Redbones. Pale amber beer, thin white head. Light corianderish spiciness in the nose over a hint of wheatiness. The yeast throws a bit of clove, and some light lemony tartness. The flavour is light and lean-bodied. A faint yeastiness over the light malts. A bit of acidity. It’s a decent enough beer, but the yeast is a bit flat.

On tap at Johnny D’s in Somerville, MA. Pours golden with no head (served in a pint glass). Aroma is floral and a bit spicy. Taste is a little bitter with citrus fruits and spices. Not so great.

Immediately fruity nose, juicy banana, blood orange and grape are complemented by a spice bag where coriander is of course up front and possibly anise. Rather dark gold to amber, wearing a moderate white head. Unfortunately, the hops used feel fairly soapy rather than crisp and there is some diacetyl detectable in there. Little evolution in mouth, staling out a bit. Rather thin bodied with fair carbonation. Average saison, once again, the focus is on the fruitiness and this butter/soapy tang detracts a lot from the overall enjoyment. For the Xth time, an american brewer seems to be using a yeast strain that would be more fitting to a weizen than for a saison where some assertive character is desired.. Cambridge really seems hit or miss with their seasonals.

(Rating #227)

(Draught) Sampled at the Belgium Comes To Cooperstown 2005 in Cooperstown, NY. Pours a huge, non-dissipating yellow head with a golden body. Nose is buttery and floral. Not my idea of a good saison.
