COMMERCIAL DESCRIPTION
Saison Noire offers a twist on our traditional Belgian farmhouse ale. Its selection of European aromatic malts, wheat, and oats are augmented by German CaraFa, a specialty dark malt offering color and soft raisiny caramel flavors with none of the roasty or bitter flavor of traditional roasted barley. Hopped with German Hallertauer and dry-hopped with Tettnanger, this black saison exhibits considerable herbal and spicy character. Our judicious use of spices in the kettle and our proprietary Belgian yeast combine to contribute flavors of orange blossom, coriander, cumin, black pepper, and ginger, blending beautifully with the medium-bodied, slightly sweet malt character.

On tap at the brewpub. Deep crabapple aroma. Lightly musky. Rather subdued. Some currants and cranberries shine through. Pours a rich deep mahogany, tinted red. Silky rim in off-white above. Flavor is a heavily spiced Head shop. There’s a distinct waft of frankincense and sandalwood. Dry. But, very incense-like. Interesting. I’ve never had a spicing like this. Dry. Very dry. There’s some cool ocean breeze and just a whole pandora’s box of exotic southeast asian floral character. Malt doesn’t really involve itself. Nor does the alcohol. Unique, but a little lacking in depth for me. I don’t find much beyond the boutique of spice.

Interesting aroma of roasted malt and bubblegummy yeast. Pours a clear brown color with almost no head. Flavor of roasted malt and bubblegummy yeast. It’s well-made, but a bit simple for a saison.

UPDATED: DEC 20, 2008 [Draft @ the brewpub] Poured a hazy, dark chestnut color with a medium sized, light tan head that left light lacing on the glass. Aroma of some light caramel, floral, various spices, and earthy yeast. Taste of dark fruits, some citrus, raisins, yeast, more spices, with some faint toffee. Overall, rather thin, and somewhat bland.

On tap at CBC. I had something called a "saison noire" which appears to be the same thing, or close to it. It was served ice cold on a cool evening (not a great idea, in my opinion), and I drank it outside. It tasted like a light dubbel - solid hops, with grains and herbal notes.
