Pouring at session one of Belgian Beer Fest in Boston. Pours a lightly hazed gold with a medium sized white beige head. Very light peppercorn, spicy and green. Gentle pepper, musk and wheat. Warm peppercorns on the finish, spicy and very nice. Well balanced with the peppercorn flavor coming through clearly, but not dominating and throwing things out of balance.

Sample, draught, on the premise, trip to the Boston Beer Summit with Luc Bourbonnière, savoured on April 17 2011; eye: caramel with a yellowish hue, lightly hazy, no effervescence, tiny ring of beige head, average lacing; nose: malt, light pepper, light spices; mouth: malt, pepper, light spices, light caramel, finale in pepper with presence of malt, medium body, average carbonation, lightly sweet, lightly harsh texture; overall: correct

Full straw golden color, some amber creeping in, head was a little underwhelming for the style. Overall, the carbonation was a tad underdone, which is important for the style. However, this think kicked butt beyond that. The aroma was bready with some sweet fruity esters, citrus, and pepper. No frigging idea what color the peppercorns really were, but they were a great touch to the finish of every sip. Bread, yeast fruity esters and phenolic products, pilsner malts (sulfury a small bit), some rye bite, some funk, and, of course, the peppercorns. An outstanding example of a spiced saison.

Taster. Light golden thin white head. Spicy saison like aroma. Flavor is mild rye malt up front with a nice dirm bitter spice and hop finish. Clean and crisp. Very tasty.

On tap at the brewpub back in March 2009.
A: Slightly reddish with a decent head and lacing that sticks fairly well.
S: The aroma of all the types of pepper is quite appetizing.
T: While the pepper was good in the smell, there’s just a little too much going on here--it’s simply overpowering. Aside from the pepper, I can pick out some sweetness and a little bit of the Belgian yeast character.
M: Fairly light body, but again overtaken by the pepper.
D: Okay. I really like this brew in theory, but the execution was just a little bit off.

Dark golden pour
Aroma is yeasty, some citrus, floral zestiness, rather nice.
Flavor is very nice yeast character, more farmhouse, spice, honeysuckle, lemon zest. The finish is what puts this into another tier, wonderful full black pepper flavor, lending some interesting heat to the brew. really nice.

On tap at Cambridge Brewing Co. Clear amber with foy white head. Floral aroma with noticable pepper and spice. Nice hoppy bitter with strong spice, not overpowering though. Lingering pepper.

On tap at CBC. Pours slightly hazy yellow gold with a 1/2" off white head. Nice little rings of lace ring the glass as the head recedes. Huge peppery aroma that will clear out your sinus cavity. Full bodied palate with the peppercorns assualting the tongue. As to flavor, again dominated with peppercorns with a nice barnyard funk in the background. Also, some nice Belgian yeast flavors in there too. This is one funky brew.

A lightly hazed golden saison with a very thin whiite head. A pleasant aroma of subdued white pepper, with honey, and coriander. In mouth, a nice peppery saison with light peppeer burn, smooth, a bit thin but overall very good. A good summer quaffer. On tap at brewpub, April 4, 2010.

Aroma smells of baby and pepper nose. Golden/clear. The pepper dominates and has a late spice finish otherwise very plain.
