James and Pete paired up for Gentleman’s Wit (4.3% ABV). The inspiration, other than loving the zesty spiciness of wit, lies somewhere between a plate of lemon meringue pie and a cup of Earl Grey tea. James roasted 20 lemons covered in bergamot for 20 hours until they were juicy, fragrant, caramelised and sharp. The beer was made with a classic recipe and yeast strain with the lemons bombing into the whirlpool at the end of the brew.
It’s turned out as one of the most incredible beers we’ve brewed. The colour is as beautiful as a beer can get: a hazy, unfiltered warm pastel yellow. The lemon and bergamot poke through the aroma, a hint of sharpness cuts through the middle, it’s dry and interesting and quenching and a dry, phenolic spice ends the mouthful like a full stop ends a sentence.

Keg. Pours a cloudy, medium straw, white head. Off-dry, light to medium bodied, low bitterness, lively CO2. Quite spicy, lemon, wheat, bergamot, yeast, phenols, coriander, orange peel. Refreshing. (2012-02-13)

On tap at the Craft. Hazy white - gold beer. Almost opaque. Little white head. Light crisp palate, semi dry.Mild tangy lemon with a trace of apple and bergamot. Crispy minerals in the finish. Mild bubblegum in the aftertaste. Clean, refreshing and a little different.

Keg @ Euston Tap. Pale straw yellow. No head. Hazy. Nose is soft and dry. Mostly citrus and wheaty notes in the aroma. But more standard cloves, banana does come through too. The taste is less sweet, drier than most of the style. Interesting. Slightly tart. Overall, certainly unique. A full pint of this might be too much.

Keg at Craft. Very pale yellow colour with small thin white head. Aroma is very creamy, lots of wheat, some spice, citrus and a touch of earl grey. Taste is ultra creamy, lots of tea, and a bit of dairy. Nice wheaty flavour with a very subtle citrus touch. Towards the end comes a bit of banana, and some herbal elements. Not much carbonation. Aftertaste is initially citrus and then mellows into smooth creaminess. Surprisingly nice!

Keg at Craft Beer Co. It pours cloudy pale yellow, with a thin white head. The nose is wheat, herb, farmyard, soft orange, pear, apple and sweaty sock. The taste is zesty lemon, lime, pear, apple, wheat, herbal, farmyard and sweaty sock. Medium body, fine carbonation and soft mouth-feel. A tasty wit.
