James and Pete paired up for Gentlemanís Wit (4.3% ABV). The inspiration, other than loving the zesty spiciness of wit, lies somewhere between a plate of lemon meringue pie and a cup of Earl Grey tea. James roasted 20 lemons covered in bergamot for 20 hours until they were juicy, fragrant, caramelised and sharp. The beer was made with a classic recipe and yeast strain with the lemons bombing into the whirlpool at the end of the brew.
Itís turned out as one of the most incredible beers weíve brewed. The colour is as beautiful as a beer can get: a hazy, unfiltered warm pastel yellow. The lemon and bergamot poke through the aroma, a hint of sharpness cuts through the middle, itís dry and interesting and quenching and a dry, phenolic spice ends the mouthful like a full stop ends a sentence.

330ml Bottle - Hazy golden in colour. Spice, lemon, tea and yeast in the aroma. Tangy, spicy and hoppy taste with notes of lemon, tea and coriander detected.

Keg at Craft, Islington. Hazy yellow/hold with decent white head. Aroma gives loads of lemon, light coriander, wheat, proper wit yeastiness. Taste gives lemon, orange peel, yeasty notes, lots of spices and herbs, and fairly thick wheatiness. Lingering lemon peel and coriander. Decent.

UPDATED: JUL 26, 2013 Bottle in Byron on Northcote Road. Colour is clear amber, white head. Nose is very lemony, bergamot tea, spicy, grainy husk malt, coriander. Taste is surprisingly quite dull. Like a spicy lager, with lemon, bergamot, grainy malt. Crisp and dry like a lager, but I thought this would have more flavour. Re-rate in Camden Town bar. Really nice creaminess on the finish. Added dimension to the beer that I didnít pick up in the bottled version.

On tap at Craft. Cos Tom said it was good. Cliudy orabge gold little white head authentic belgian wit. Very full in mouth. Lovely lemony hop. No faults at all. Very tasty with orange notes and tasty as hell. Good beer. Tom you were right

Bottle at bryon. Hazy green yellow no head. Corriander Orange zest aroma. Live bready chalky zesty crisp. Drinkable.

Tap at the Craft Beer Co, Clerkenwell, 13/04/13. Hazed pale yellow/blonde with a very thin off white head. Nose carries citrus notes, spice, wheat, corriander, lemon grass, light soap. Taste comprises lemon, bitter orange, wheat notes, pinch of corriander, herbal qualities. Medium bodied with a little spritz in the carbonation befitting the style, dry finish. A refreshing and decent Wit.

Lemon with some tea along with plenty of spice and some nice wheat notes too. There is a touch of banana and a little clove and orange zest too.
Cloudy, pale golden with a thin, white head with a foamy texture on top that finally turns to a patchy lacing.
Tangy lemon and a slightly tarty taste, there is some spice and pepper along with a touch of coriander and a mild banana taste.
Smooth & well carbonated with a medium body and quite a fruity, dry finish.

A solid witbier with a good fruit base and a lot of lemon coming through too with a nice, tarty finish. The taste isnít a spectacular one but it has a nice balance and goes down pretty easily.

Keg at CBC Clerkenwell. Pale yellow colour with white head. Really fresh flavour of plums, citrus and flowers, roses in particular. Spicy, fruity taste with no bitterness. Very refreshing, ideal for roasted fish and summer in general.

Cask. Pours hazy yellow with almost no head which fades within a minute. Aroma is wheat, slight malt, orange, lemon and herbs. Taste is quite sweet but fairly short lived and a hint of dryness in the aftertaste. Overall very nice.
