James and Pete paired up for Gentlemanís Wit (4.3% ABV). The inspiration, other than loving the zesty spiciness of wit, lies somewhere between a plate of lemon meringue pie and a cup of Earl Grey tea. James roasted 20 lemons covered in bergamot for 20 hours until they were juicy, fragrant, caramelised and sharp. The beer was made with a classic recipe and yeast strain with the lemons bombing into the whirlpool at the end of the brew.
Itís turned out as one of the most incredible beers weíve brewed. The colour is as beautiful as a beer can get: a hazy, unfiltered warm pastel yellow. The lemon and bergamot poke through the aroma, a hint of sharpness cuts through the middle, itís dry and interesting and quenching and a dry, phenolic spice ends the mouthful like a full stop ends a sentence.

Medium white head. Hazy pale yellow body. Fruity mealy coriander aroma, clean and straightforward. Dry coriander and fruit taste with floral mealy mint notes. Mid-bodied. Mild, soft, mealy, slightly flat mouthfeel. Dryish herbal coriander aftertaste with mealy wheaty notes. Itís not bad at all, but a bit anonymous. (0.33l bottle, from Waitrose Canary Wharf, London.)

Hazy blond colour. Aroma is citrusy and a bit soapy. Fresh and zesty taste. The lemon is definitely noticeable. Quite sweet at first with a little bitterness in the finish.

A little bit "old" - Best before november 24 - 2013. Still very drinkable though! Hazy gold yellow with a one finger high, white head tha dissapears fast. A nose of citrus, orange, coriander, banana and herbs. Fresh taste of bread, citrus, lemon peel and clove. Light, fresh body - Easy drinkable!

Bottle. Hazy yellow gold with an off white foam. Aromas are clean wheat with lemon and lime. Coriander with leafy, herbal notes. Flavours are lemon with yeast and sweet wheat. Resinous with sugar and nutty lager malts base. Not bad.

Draught at The Euston Tap, London on 23 Jun 2012. Poured a cloudy golden colour, with a thin white head. Aroma of pear drops, cloves, coriander and banana essence. Fairly light flavours of bread, wheat and citrus. Finish was dough, grass and lemon zest.

Keg, Liverpool Craft Beer Expo, Camp & Furnace. Hazy yellow looks with a small white head. Banana and clove notes in the nose. Flavour was a little sweet and has some juicy citrus and spice alongside wheat and yeast notes. Full smooth mouthfeel. For some reason far better than anticipated. A tasty interpretation of the style.
