James and Pete paired up for Gentleman’s Wit (4.3% ABV). The inspiration, other than loving the zesty spiciness of wit, lies somewhere between a plate of lemon meringue pie and a cup of Earl Grey tea. James roasted 20 lemons covered in bergamot for 20 hours until they were juicy, fragrant, caramelised and sharp. The beer was made with a classic recipe and yeast strain with the lemons bombing into the whirlpool at the end of the brew.
It’s turned out as one of the most incredible beers we’ve brewed. The colour is as beautiful as a beer can get: a hazy, unfiltered warm pastel yellow. The lemon and bergamot poke through the aroma, a hint of sharpness cuts through the middle, it’s dry and interesting and quenching and a dry, phenolic spice ends the mouthful like a full stop ends a sentence.

Bottle BBE: 07.02.16. Cellar temp. Pours a hazy lemon-gold with small-negligible head. Medium-high intensity wheat aroma, with tangy Seville orange, a soft banana sweetness and light lavender/floral notes. A light-medium sweetness overcomes a gentle sourness, with a light orange bitterness to finish. Light-medium bodied with a slightly coarse texture, carbonation is low and the finish is citric and lasting. This is a really enjoyable beer, but let down massively by the low carbonation. Despite the sour hint, this leaves the body a little flabby and lifeless. The orangey flavours are spot on though.

Bottle from Booths, Clitheroe. Straw-blonde wit a very thin head. Decent witbier, similar to Hoegaarden, with plenty of citrus in its nose.

Had a bottle of this a while back but didn’t rate it. This time it’s a pint from keg at the Botanist pub near Liverpool St, 19/06/15. Post exam celebrations in the sunshine. Pale yellow, very hazy, sparkling, small foamy white head. Aroma is light, vague citrus. Body is light, tingly carbonation. Taste is wheaty, medicinal, sodawater. Basic and gassy. The over-carbonation detracted a lot.

On tap at the Perseverance, Lambs Conduit Street. A hazy pale straw pour with a thin white head; fresh lemony aroma; soft berry fruit taste with a slightly chalky body; and a dry, refreshing finish. A pleasant Wit, on the first proper day of summer.
