notalush (1967), Rawn-kawn-kohma, New York, USA Apr 22, 2008 Thanks to beastiefan2k for sharing - cloudy straw, nearly still beer - kind of muted funk and acidity in the aroma for a Cantillon - strong woody components in the nose - the oak is also quite strong in the flavor, and the beer doesn’t have that huge, cheek-slapping sourness I expected - still quite funk/barnyardy, though - because of the nature of the base beer, the cognac barrel hasn’t added a lot of it’s own character, but it has softened the beer a great deal, making it smoother and easier to drink than most of their beers - it also allows some of the earthy complexities to come to the fore that the high acidity would otherwise have squashed - nicely done.

Pours hazy golden orange with a medium white head, Aroma of tart apples and sweet malts. taste is veryy sour with strong wood and cognac notes. An excellent sour. Sweat, fermented apple, and tart acidic/lactic acid. The flavor trends towards the bitter/funky grapefruit rind end of the lambic spectrum. Notably bitter, perhaps the most "hoppy" of any gueuze I’ve tried. Finishes with more bitter grapefruit. I don’t detect much in the way of cognac but this is still a pretty good gueuze. I’ve had one in the cellar for a while but thought tonight might be a nice night to break this out and chill out some with a yummy gueze. Pours a very nice orange with a 1 finger tan head. Nose is sour and tart with all kinds of Guezey funk. Right now its probably too cold but for the second pour i’m sure it’ll warm up well. Taste is sour and full of funk, definetly some citrus in here some lemon and other fruit. Tons of oak and the cognac is here too. Pours hazy yellow with a small, staying, white, creamy head. Impressive looks for a lambic. Aroma is tart, some oak, lemons, citric acid, overripe apples. Medium carbonation, easily drinkable.
