The aroma was light funk and lots of sour. Had a tough time finding much cognac. The flavor too was a bit of funk with plenty of sourness and very little cognac that was discernible to me. Flavor is wooden and sweet, with the usual ripping sourness beneath; the animal qualities are a bit buried as well, but the acetic flavors are quite forward; mostly champagne vinegar and a bit of balsamic. Theres a spirit texture of sweetness in the wooden flavor that seems to calm everything somewhat, but its not obviously cognac; its general, and lets out some malt flavors; dried apples and some brownish spiciness.
Definitely a richer, warmer example than many others, and somehow cleaner as well, though not short on the desired flavors; smooth textured and bright overall. Highly likable! Enjoyit (1708), Vadum, Denmark
