Like the most balanced and drinkable lambic ever, like i had my glass in under 4 mins while everyone else is still nosing it. The cognac is subtle and adds a pepperyness to the tongue on the finish, theres also some fruity notes in the aroma. Clear pale amber coloured with almost no head. Wonderfull. Wonderfull. Very smooth and has a great sourness level. Very complex and well balanced. Simply wonderfull. Aroma of fresh fruits, peaches, light wood and pale malt. Even flavors of sour, peach, vinous fruits, wood, light yeast and barnyard. Light body, sour, with a sour dry finish. Fantastic brew! Hildigöltur (5109), København, Denmark Mar 28, 2004 This is one of the greatest beers I have ever tasted. Very deep golden orange coloured. Fantastic harmony between the sour, woody and grapefruity lambic and the cognac notes. Extremely complex and extremely delicious. JK (2946), Richfield, Minnesota, USA Jul 26, 2008 A huge thanks to BDR for sharing this incredibly rare, and expensive beer. Like everyone Cantillon, it is delicious and without flaw. Sour barnyard aroma. Tons of barnyard character, horse blanket, vinegar. Lots of yeast. There is some grape, but I don’t taste the cognac. Bright, cloudy yellow, and lots of thin, white foam that leaves a lacing on the glass. Finish has cloves and some apricot. This is an incredible beer. One of my highest ratings ever. Faint vinous character in both bottles I’ve had, but the cognac showed through much more in the second bottle. Incredibly sour and worthy of the Cantillon name. renffisch (500), london, Greater London, England Sep 7, 2008 75cl bottle, at home. i almost cried when it was finished. almost a reason to move to brussels!! one of the softest and most delicate geuze i had, delicate horsey, vanilla and pepper nose. sour but in a light velvety sort of way, woody, citric, mouthwatering. if i could imagine what the tears of a goddess would taste like, this comes pretty close xxx eaglefan538 (2355), Wilmington, Delaware, USA Sep 5, 2008 Bottle from State Line, purchased in May, and then brought back for sharing after the shelves went dry in days, me a lucky passerby who happened to grabbed on in a short window. The pour yielded a nice hazy golden straw color, decent initial head, thinned to a ring, spotty if any lacing. The aroma was funky tart apples, grapes, and lemons, light leathery elements. The flavor was so excellent, this thing just melded together nicely, remained pleasantly drinkable (I even said it came across as a gueuze, so smooth, no idea that was the classification here). Wonderful notes of leather and the tartness worked for me, and this finished with a very mildly sweet touch in the finish. No, the sweetness wouldn’t be perceivable to the novice, but for a Cantillon brew, this had a very nice mild-balanced (for a lambic) finish, that was very pleasant. A solid and stellar brew, glad I was able to share with those that didn’t get the bottle. If only I had some more? Mouthfeel was spritzy, slightly less carbonated than other gueze brews, but moreso than a standard flat/still type lambic. Is this my favorite Cantillon? I think perhaps so.
