COMMERCIAL DESCRIPTION
In March 2005, the brewery Cantillon had bought second hands barrels in the region of Cognac. For 15 years, the wood had been impregnate with cognac. Then for 2 years, our lambic has extracted all the flavors and aromas to make a unique gueuze. The name comes from the geographic location of the brewery.

Applejuice coloured. Very dry. Very acid. Tones acetone and acetic acid. Apple peal in aftertaste.

Hazy light amber colour. Fresh, wheaty, bretty goodness. Very tart. Very musty. Pleasing underlying sweetness. Slight oak note, but I missed the cognac influence.

Bottled. Flat amber colour. Good old(but a bit vague) Cantillon nose - tart and acidic. Obviously the cognac notes(from the cask) neutralizes the sourness. Finishes dry, but not as dry as one would expect.

Very tart aroma, lactic, sour white wine. Hazy cider amber with no head. Medium watery with low carbonation. Starts very tart, lactic, with light bitterness. Light grape profile, tannin. Finish is lactic sour, bitter. Dry chalky after, saliva inducing.

Bottled (from Jacob’s collection). Hazy pale orange. Up front Cantillon acidity mingles with strong cognac aroma. Sweeter than the average Cantillon, yet fresh and acidic. After the initial punch the cognac flavour subdues to a more balanced level. Interesting, and - as alwatys with Cantillon - very, very good.

Hazy golden color. Delicate aroma, only lately shows some fruitness and cognac; pears and apricots in spirit. A real character, with very light wood notes, turning into a woody bitterness at the end; still some unfermented sugars.

Bottled: Peach coloured. Dusty. No head as it should be. Light sour, fruity and with a good sweetness in the aroma. Is dry and fresh in the flavour. Has a smooth and full fruityness. Has a sharp citric aftertaste. Nice one. Thanks Jacob.

Sampled fresh from the barrel at the Cantillon Open Brewing Day March 2004. Faintly hazy amber, no head and light spritzy condition. Quite sharp in the nose with lambic notes clashing with an obvious spirity edge, although the source wasn't obvious. Excellent woody tartnes and apple notes in the mouth with a long finish tinged with citric and funky barnyard notes. Excellent.
