COMMERCIAL DESCRIPTION
In March 2005, the brewery Cantillon had bought second hands barrels in the region of Cognac. For 15 years, the wood had been impregnate with cognac. Then for 2 years, our lambic has extracted all the flavors and aromas to make a unique gueuze. The name comes from the geographic location of the brewery.

750ml bottle@Vero Beach Throwdown-pours a white head that bubbles and hazy yellow/gold color. Aroma is musty yeast, leather, vinegar. Taste is apple cider, musty yeast, leather, vinegar, some tartness. Occasional. Thanks hopscotch for sharing.

Bottle. Belgian beer rating # 400. Nice hazy orange colour, hardly any head. Sour and mouldy aroma. The flavour is bitter with lemon, vinegar and some wood. Dry bitterish sour finish.

Pours hazy yellow with a small, staying, white, creamy head. Impressive looks for a lambic. Aroma is tart, some oak, lemons, citric acid, overripe apples. Medium carbonation, easily drinkable. Pleasant flavour, good tartness, citric, apples, oak and subdued notes of caramel. Wonderful.

Shared by Jens ungstrup at his place at his "after ølbutikken tasting catch-up tasting". Finally found my note for this one today. Cloudy orange, small white head. aroms is barnyard, hops, stables., flavor is wildt yeasty, quite tart, flavors are perfectly balanced, taste is very very good, I hope to try it again someday.

Tasting at Ølbaren 2008.03.11 - Thanks Fonefan for sharing. It’s hazy, warm golden with a small head. The aroma is sour with loads of citrus, including a lot of lime. The flavour is sour with somewhat sharp notes of grapefruit peel, but at the same time it’s smooth and vinous with notes of grapes. Normally Cantillion is too hard core for me, but I actually like this one!

Cloudy orange with a lasting white head. Funky leather and grapefruit aroma, but with complex nutty wood notes and rather distinct cognac notes. Tart and complex acidic flavour with sweetish cognac notes. One of the smoothest and most pleasant Cantillons I have had.

Bottle @ jbrus’s place. Citrus, banana, pineapple, honey, brandy and oak in the aroma. Verey soft and fruity flavor with grapefruit, lemon sweet apples, pineapple and oak. Leather in the finish, with strong cognac notes. Lemony and grapefruity. Amazingly complexity. World class lambic!

Bottle. Frothy white fair mostly deminishing head. Yellow colour. Heavy barnyard leather aroam. very sour indeed. very sour flavor. Astringent. Long finish. Oily palate. Exploding but not the best gueuze.

Bottled: Peach coloured. Dusty. No head as it should be. Light sour, fruity and with a good sweetness in the aroma. Is dry and fresh in the flavour. Has a smooth and full fruityness. Has a sharp citric aftertaste. Nice one. Thanks Jacob.
