COMMERCIAL DESCRIPTION
In March 2005, the brewery Cantillon had bought second hands barrels in the region of Cognac. For 15 years, the wood had been impregnate with cognac. Then for 2 years, our lambic has extracted all the flavors and aromas to make a unique gueuze. The name comes from the geographic location of the brewery.

Bottle, 5% at GBBF08. Good citric flavour, some orange juice. Cloudy orange colour. Stable white head. Very nice citric flavour, not mouthpuckering, but really good. A well-balanced lambic.

My bottle from Binny’s on Marcey (at the time Sam’s) opened at RBSG. This was definitely one of my highlights at RBSG. Pours an orangey gold with some nice hazing. Firm white head. Nose is sweet and sour, some grapey cognac notes and some horseblanket, farm, straw and a bit of tropical funk. On taste, the cognac throws some booze into the mix for sure, but the acidity of the base beer balances it perfectly. Nice dry white wine with some sweetness from the oak and vanilla. Round and full, this is a fantastic one.

Bottle at Novare Res. Aroma, well you’ve got that vicious gueuze cantillon aroma of malts, funk, horseblanket, leather, sourness, and oaky cigars. Appearance is a cloudy amber...a sight i’ve learned to know means business. There’s a thin film of head that swirls and lingers around the whole time. Taste is fantastic, sweet from the oak, malt and cognac....sour from the yeast, slightly hoppy and just mind blowingly good. Palate is a bit acidic, but super soft and smooth. Overall this is a beer to behold, something I’ll enjoy every time i get the chance.

UPDATED: SEP 19, 2011 Bottle (Bager 2007 & Jacob 2003) at PlanB. Clear amber - white head. Lovely soft/smooth sourness, light sharp cognac taste and aroma, grape, citrus, zesty. High dry / light sour finish. Very smooth. The old one (2003) has less cognac than the new one !!!!

Bottle generously shared by Nick3 on BeerAdvocate at a tasting. Slightly hazy golden pour with a one finger white head that leaves a nice film and lacing. Really looks incredible. Aroma is has your typical gueuze characteristics, with bretty funk and wood, as well as an interesting cognac note. Flavor is both sweet and tart, with your usual barnyard funky gueuze flavors along with a touch of sweet cognac. Lots of wood in there as well, maybe even some hop bitterness. Cognac on the finish. Very complex and nothing short of amazing. Really, this is easily the best Cantillon I’ve had to this point and may be the best sour beer I’ve had. Palate is dry and tart with some well-balanced acidity. Medium body and a very long finish.

Bottle. Nice smelly, horseblanket aromas. Quite soft and a touch sweeter than other Cantillon beers, but yes, this is still definitely on the sour side of things. Some citrus fruit, with some apples, and also some woody cognac flavours (very, very subtle it has to be said). Also got a hint of vanilla. Sour, acidic, juicy finish. Very good.

UPDATED: JUN 10, 2008 Bottle acquired in trade. Not much head in this with the unmistakable Cantillon aroma. The flavor is a bit sweeter and mellower but absolutely no hint of cognac that I could tell. Flavor I get the most is wet grass and wet wood. It’s a fantastic beer.

Thanks to egadjzis for sharing this one. Pours a hazy orange/golden with a smaller bubbly/creamy off white head that left some lacing. Aroma of floral, perfume, mixed citrus, tons of flowers, sour cherries, funky/sour nose, grapes, kind of woody. Wonderful nose. Flavor of sour cherries, funky/sour, oak, light vanilla, wonderfully floral, mixed citrus, moderate bitterness, right amount of tartness.

A Mes rate: Bottle at London Drinker, Cantillon and in Glasgow with Tom.
Cloudy golden brown with lots of lace and a tenacious white head. Awesome Cantillon sourness in the aroma with some unusual smoky notes and a bit of lemon. Only slight congnac but there are some utterly superb barelly bits showing. Flavour follows on in a similar vein. The cognac comes through a little more, especially in the finish. Such a glorious balance of tarty lemon sourness and incredible god damn adorable cognac barrel notes. Outstanding stuff. Perfect mouthfeel, just perfect. LOVE IT.

One of the best guezes I have ever had. The chracteristics of the beer type is still there, but the acidic taste blends with sweet and darker nuances from the cognac barrels. Maybe it was just me being happy that day, but I thought this beer to be more than splendid.
