COMMERCIAL DESCRIPTION
In March 2005, the brewery Cantillon had bought second hands barrels in the region of Cognac. For 15 years, the wood had been impregnate with cognac. Then for 2 years, our lambic has extracted all the flavors and aromas to make a unique gueuze. The name comes from the geographic location of the brewery.

Pours murky muddy straw yellow with a bit of white head. It smells a bit like pears. Very nice barrel and wine notes. The flavor is bretty with some vomit notes. Very oaky which is reflected in the finish as well. Pretty good.

Bottled. Flat amber colour. Good old(but a bit vague) Cantillon nose - tart and acidic. Obviously the cognac notes(from the cask) neutralizes the sourness. Finishes dry, but not as dry as one would expect.

Hazy orange colour with a small thin white head. Fruity, tart and light yeasty aroma with some dusty notes. Tart fruity flavor with yeasty citric notes. Light sweet finish. A very wellbalanced beer...nice.

Bottle, 75cl. A hazy, a bit pale orange-golden beer with a small, off-white head. The aroma has the most obvious and expected scents like barnyard, horseblanket and yeast, and of course citrusy acidity, but it’s not amongst the most complex gueuzes. Really pleasant though, just like the flavor, which is almost sweetish, but of course more on the acidic side. Low on carbonation, astringent, with barnyard and citrusy sourness. Mostly lemonish sourness. Some green apples too. The supposed imprint from the cognac barrels isn’t something I detect. Surprisingly easy to drink. (081220)

Bottle. Belgian beer rating # 400. Nice hazy orange colour, hardly any head. Sour and mouldy aroma. The flavour is bitter with lemon, vinegar and some wood. Dry bitterish sour finish.

Bottle from Ølbutikken. Barnyard, citrus, grape, apple, all with a bit of oak but utterly lacking in "cognac" :) Smooth (almost too much so?), hazy. Overall, not an essential Cantillon, but it was fun.

Bottle from Zinister at the Houston sour tasting. Thanks, man! Pours a cloudy mac ’n cheese orange with an aroma of plastic table mat like Mom used to have, cedar, and lemon. Flavor is woody cedar that finishes with essence of old woman smell. Tingly mouthfeel. Might set another course with this one.

March Houston Tasting. Thanks to ygtbsm94. Pours a cloudy yellow with not head. Nose of sour, tartness, whiskey, cognac, oak and spices. Flavor is woody with citrus peels. Bitter finish.

Sampled at Houston tasting and thanks to zinister. Dark yellow and clear. Nose is slightly tangy and tart. Taste is woody, a bit winey, very smooth, tart, tangy, mouth puckering. Well done.
