As for my 1500th rating , i decided to crack this one . Might not be a whale , but this is the last cantillon i have left to tick that im able to gwet . why i chose this one ? Pure respect for tge brewer . And the team . And the products .
Bottle 75 cl @ home , botteled 3 years ago . So lambic now is 6 y old
Pours fuzzy blonde , no foam as to be aspected
Smell is pure cantillon funk
Very dry mouthfeel , funk ( much funk ) some minor but sharp sourness that leaves instantly
Aftertaste is pure dry bitter funk .
So basicly , if you like their typical funk - get this . If not , avoid at all cost .
I myself love their funk , but prefer a little carbo in my beer . As for a lambic though , this does everything its ment to do . Respect , again , guys !

Bottle shared at Darkness Day. Yummy - sour, more on the acetic side, but still soft and complex.

A: Hazy Golden Straw Hue, Passes Some Light, No Head, No Lacing
S: Sour Mash, Apricots
T: Sour Mash, Apricots
M: Poor Carbonation, Medium Bodied, Semi Sour
Overall, too bad the carbonation was crap because the beer was good without it, but not great.

4.6 AROMA 8/10 APPEARANCE 5/5 TASTE 9/10 PALATE 5/5 OVERALL 19/20
Exceptionally clean clear flavor, just exploding with balanced tart and sour with the raw funk of nature. Tons of slick malts behind it all with pils, kilned sweetness, and wheat twisted by wild yeast. Carbonation is a dream, sprite yet soft, an amazing effect and aids the flavor tons. Slick and complex. Damn, like the Brueghel painting I could drink this by the tankard on a Fall night. Can we get more unblended lambics, please? A fascinating experience as the lack of barrel blending makes a for a clear and singular flavor profile.

Siiderimäinen, samea ulkonäkö, ei vaahtoa tai kuplia. Maku aluksi miedon hapan, happamoituu jälkimakua kohden. Katkeruus selvemmin alun maussa; jälkimaussa jää taka-alalle.

4.1 AROMA 7/10 APPEARANCE 4/5 TASTE 8/10 PALATE 4/5 OVERALL 18/20
Bottle 0.75l from Marlou Zonhoven. Pours an orange with no head and actually no carbonation. Looks like cider or aged white wine. Aroma is tart, acidic, vinegar. Taste is at first very sour and intense. After some time it gets much more balanced between vinegary sourness, apples, grapes and some bitter hints. Really like how this beer changes in the glass over time. Unique and great beer.

Golden orange in color.... Aroma of barnyard funk, acidity... Flavor is citrus acidity, grains, earth, not terribly tart but super funky... Enjoyable
