75cl bottle, vintage 2007, bottled 01/2011. Poured deep golden with no head. Aroma is sourish apples. Flavor is similar, very dry, sour, vinegary with some fruity notes as well. Great lambic, truly enjoyable.

Pours cloudy orange with a small off-white head. Aroma has notes of malt, funk and some sour fruits, Taste is light sweet and medium sour with a very smooth flavourful dry finish. Body is medium, texture is thin to oily, carbonation is soft.

Bottle... Poured a golden, pale yellow with a thin white head. Despite the head, minimal carbonation here as expected with this straight lambic. A little musky, some burnt corn and a rubbery chemical character. Not overly acidic or funky. Seemed like a watered down Cantillon. Some barrel character with loads of citrus/lemon peel tartness.

750ml bottle, 2006. Fairly clear pale orange, no head at all - pours as if there is no carbonation. A decent amount of funk, some farmhouse, bit of grass, musty, hints of apples. No carbonation, tartness has mellowed, funk is still present, decent body but thin compared to some other Cantillons. Typical dry finish, sour hits a bit more at the end as well. Decent but would have liked some carbonation and maybe a bit more body. Still worth trying - and fresh it has more to it for sure.

Appearance: dried straw and hay with slight orange hues. No visible carbonation except for a minuscule bubbly collar. Swirls with nothing.
Nose: barn, funk, dust, leather, old furniture. Musty. Grape pomace. Hay stacks and burlap sakes, sawdust and oak planks. Green grape skins.
Palate: little to no carbonation – smooth, silky, and a little thin but in a good way. Sawdust, leather shammy, oak, musk, and pomace. Tartness in the middle – grape skins of the Pinot Grigio and oaked Chardonnay variety. Apple and pear skins. Essence of the farm and barnhouse. Old leather with just a hint of varnish. Soured apples, apple vinegar.
Final Thoughts: I love love love Cantillon. Seriously. Sour makes me happy and Cantillon makes me orgasmically ecstatic. Seriously. Sublime sophisticated humble earthen history is at the heart of lambics.

floral fermenting apple aromas, wood, earth, musty hops, some orange-rind flavors coming in on the finish. medium carbonation made this feel very nice on the palate and carried the tart complexity all the way around the tongue. lemony, dry, wine-like bitterness on the finish.

Tiny white head. Hazy yellow body. Deep fruity earthy apple aroma with funky woolen blanket notes. Dry-sweet and acidic waxy earthy fruity taste with oily apple notes. Mild, soft mouthfeel, kind of musty. Mid-bodied. Dryish mealy mineraly fruity aftertaste with almonds, wax and flowers notes. Aroma is great. Taste is a bit flat and dead. (0.75l bottle, wine monopoly, Vika, Oslo. 2007 vintage.)

0.75l bottle. Pours a hazy straw-yellow body with a thin bubbly head that’s quickly gone. The aroma is really fruity with strawberries, citrus, some basement dust, apples and grass. Really low on the tartness. The carbonation is completely flat and totally absent, while the mouthfeel is light oily. Tastes light lemon-sour with notes of fruits, some woody-brett and sour not just right red currants. Ends light dry with tones of sweet yellow apples. The lacking of carbonation was quite strange and I think this would have been even better if it had at least some C02. Still, quite good stuff this!

Tasted from a capped and corked 750mL bottle at Delilah’s 2011 Lambic Fest. Pours hazy yellow-orange with a thin white head, that recedes rather quickly to nothing at all. The nose is sour, dusty, classic Cantillon funk, vanilla oak, and lemon pith. The flavor is intense sour lemon, barnyard, vanilla oak, and some dusty tannin. The body is medium and oily, with not carbonation, and a long, acidic lemon, vanilla oak, and tannic finish.
