UPDATED: FEB 16, 2015 Bottle: Deeply hazed amber & burnt golden color, not much head (as expected) just a few mild bubbles on top. Aroma of sour lemon, sweat socks, horsey funk, wet hay, acidic stone fruit, & some faint yogurty lacto. Notes of funky cork, cheese rind, & wood near the end. Sour lemon & apple skin flavor, lightly acidic. Notes of sour lacto, hay, cork, funky driftwood, & some horse sweat. Hints of white grape & stone fruit. Cheesy, funky, woody, dry, sour. Flat, oily mouth feel. Really nice, but not in Cantillon’s upper echelon.

Bottle @ home. Pours with a bright orange colour, small diminishing frothy white head. Aroma has notes of leather, barnyard and basement aromas, very nice because it’s not overwhelming, as it usually happens with lambic beer. Taste is medium sweet, slightly bitter, medium sour. Medium body, watery texture, flat carbonation.

Draught @ Wildeman, Amsterdam. Clear orange amber. Smell like piss (ok!). Restrained funk, sour, light blue cheese. Fresh, balanced, but niche.

Bottle from Sean, bought at De Molen. Clear yellow, no head. Sharp sour nose, bitter cooking apples. Flavour is mellow sourness. Soft carbonation, syrupy mouthfeel. Finish is mellow, applejack, amazing.

Dorée à l’aspect embrouillé évident, aucune mousse se forme lors du versement, laissant ainsi croire que la carbonatation sera assez faible. En fait, elle est inexistante et c’est tout à fait normal pour ce type de lambic. Malgré tout, une certaine rondeur est appréciable en bouche, la texture étant un peu grasse même. L’acidité est délicate et le funk est léger. Céréales et fruits jaunes s’amalgament dans un breuvage hautement rafraîchissant au nez poussiéreux et fermier.

(sample from bottle, Lambic Bio 2010, thanks Blade86) Light hazy, orange colour, no foam. No carbonation, watery to minimal oily texture, soft body. Aroma: Notes of brettanomyces, barnyard, basament, yeast, flowers, soft wooden aroma, wine vinegar, white fruits. Taste: High and increasing acidity, flowers and wgite,sour fruits. A bit wooden aftertaste.

December 27, 2014 - bottle shared by Brett. Clear golden pour with some bubbles as the head. Aroma and taste of barnyard funk and wood. This was very well balanced and easy to drink.
