A classic, specially selected single batch of lambic, aged three years in the cask. The only unblended real lambic you can find anywhere.

750ml bottle, I think it was bottled in 2007. Pours medium orange, almost no head, but little bubbles throughout and a fine white ring on top. Nose is very Cantillon, sour citrus fruits, dried herbs, really sour and funky. Light carbonation in the mouth. Classic Cantillon expression, big, funky, barnyard. Lemon and dried sage, dried mint. Of course really sour and dry, not as effervescent as the Gueuze. Pretty refined and nuanced.

Bottle from Cantillon. Pours a dark golden colour with a lacy beige head. Aroma of lemon, horse blanket, wet cardboard and oak. Similar flavours and fairly tart with a dry finish. Very low carbonation and an oily mouth-feel. An excellent lambic.

Bottled 05 August, 2007 Slightly hazy orange-amber, no head. some particulate floaters. Aroma is tart/sour....some damp wood funk. Taste is an aged fruity wine-like sour.

Bottle (2007). Woody, funky, tart vinous aroma. Hazy golden with no head, suspended sediment. Mellow, tart unpasteurized cider vinegar type flavor, woody, funky, light bitterness in the finish, Light to medium body with a dry tannic finish.

Headless, orange beer. Fresh apple cider, pretty clean, cheese, raw but not sharp sourness shining through. Quite smooth actually although not super complex. Sweet end. Refreshing. I could drink loads of this when properly cooled on a proper warm day. (75cl bottle, marked bottled 01-2012, bit expensive priced)

Bottle. 2006 Bio. Aromas of leather, dry fruit, stinky socks, lemon zest, and more (complex). Apple juice, cloudy orange color. Flavors run the gamut from cheese, rancid butter, horse sweat. Funk and more funk with a woody finish. Flat, absolutely no carbonation. Pure lambic with ancient flavors.

[Grand Cru Bruocsella - Lambic Bio 2007] Bottle (75cl) from Vinmonopolet (Vika), Oslo. Clear (or slightly milky) golden/amber colour with a faint greenish tint. No head. Complex aroma of vinegar, barnyard, leather, yellow apple, peach, yeast, paint. Medium body, flat carbonation. Tart taste, balanced by apple juice sweetness. Finishes with a slightly ’burning’ vinegar acidity. Very interesting - definitely a grower that I will need to rerate when having gained more familiarity with the style.

2006 bottle, Bio. Clear medium bronze color. Not a bubble in the house. Nose of leather, old hardcover books, tobacco. Flavors of mineral water, oily, light tartness, very cheesy. Leather is the overwhelming flavor, though, with dust, socks, lemon zest or pith, and lots of wood. Very mellow with age and not much tartness left. A fascinating beer that is not immediately approachable or likeable, but that I enjoyed more than newer Oude Lambics I have had on draught.

(bottle) pours a slightly hazy golden colour with no head. aroma of treebark, apple juice, earth and grass, peaches, snails in garlic sauce and light gouda, quite funky. flavour is milk chocolate and wood, very cheesy, with lots of lime and sour dough. medium-bodied with no carbonation.
