Cottony, honeysuckle-scented perfume wafts through tart lactic and citric acids, bringing a steady stream of fresh salty warm breezes. Strong and beautiful. Pours a stunning near-crystal-clear peachy shining golden, with a rim in soapy, heavy lacing pure white. Gueze is good. Tart, vibrant, alive and lightly white-grape vinous. Dry, oaked, and crisp. A bit of bearberry and lemon acids come through. The sugar palate isn’t as soft and creamy as other versions, but this has a stunning pale nectarine and peach fruit profile. Balanced. The funk level lays a little lower. The carbonation is a bit softer than I expected. Finishing, this beer gives a fireworks glow or ruby, golden, and white grapefruit pulp and zest. Aroma has some cellar, funk, grapefruit, typical Cantillon. Tart with lots of grapefruit peel-type astringency, lots of wood in the finish. Could it be, my new favorite beer?! This is friggen amazing stuff. The dry hopping gives it a nice hoppy aroma in the glass in addition to the aged hops, and wild yeasts its a wonderful nose. The flavor is heavenly, sour, sweet, and tangy. This is a perfectly put together beer, a bottle I’ll never ever forget.
