Commercial Description:
A new brew concocted by Jean Van Roy to celebrate the 2003-2004 Division III title for the local Union St. Gilles football team and its upgrade to Division II.

Cuvee des Champions is not a traditional 'gueuze,' in that it is made from only two year-old 2001 lambic, not from a blend of older and younger lambics. It is also dry-hopped in the cask for three weeks with fresh Styrian Goldings hops. Re-fermentation in the bottle is achieved with the addition of a small amount of candi sugar.

Hazy yellow with a medium, tight head. Dry, neutral and acidic aroma with apricots and pectine(?). Not as dry/sour as most Cantillons. Fruity, acidic flavor. Medium-bodied, acidic, easily drinkable palate with medium carbonation. A typical, maybe somewhat "easy" Cantillon.

(At Akkurat, Stockholm, Mar 10) Pale amber colour, with almost no head. Complex, earthy, sour nose with hints of old socks (yes, very nice!). Taste is well balanced: sour, mature, earthy, musty with hints of citrus (tangerine, mandarine). Some fresh hops as well. Very nice!

I’m struck by the richness of the aroma: quite complex for a lambic: yeasty, musty and cellar-like, and very fruity (strawberry). Hints of wheat and strawberries are also in the very tart flavor. I’m not sure what exactly this beer has on other lambics, but I find that its slightly more pleasant than usual. It’s making me crave some stinky cheese, however.

Perfectly clear golden, with a lot more carbonation than I’m used to seeing in Cantillon brews - a slightly grassy hop character in the aroma, along with the expected, cheesy, musty, barnyard smells - a unique sourness in this one; it’s almost tangy - quite dry - white wine character in abundance - a sour-apple, cider-like quality as well - background brett/cheesiness - quite nice stuff.

Golden colour with a white head. Barnyard and hoppy aroma. Flavor is sour and fruity with some hints of hops. A little bitter aftertaste.

[ Bottled ; chilled ; 2004 vintage ; with IDLB and MtlCrew ]
A fully diminushing small fizzy white head that tops up a hazy deep orange body. No lacing. Few average size particules. Many medium bubbles. Barnyard, lactic acid impressions.. fruits sugar like aroma. Less tart, more fruity then the Vignerone and St-Lamvinus we also had that day. Detected a higher then average bitterness level for the style which was not unpleasant.

Extremely pungent nose - sour, vinegar and funky. Gold color with a fizzy head. Apple vinegar taste, some pepper. Sour but more dry - like a fresh date. Very thin body. Grassy gritty texture that scratches on the way down.

750 mL bottle, corked & caged (Bottled in 2004, sampled 28 February 2006): Shimmering gold with a fluffy light tan head that quickly fizzes into the characteristic gueuze sparsely bubble foam…sour lime and horse blanket aroma. Tart grapefruit and pine cone flavour wraps the tongue nicely. Carbonation is on the low side…but does not detract from my enjoyment…Long, sour-puckering bitterness…granny smith apple tarts with just enough sweetness. This one doesn’t have the iron flavours, the sharp sourness or mustiness that I truly love…but it was still a fantastic treat.
