Unclear golden with a great, dense frothy head. Very yeasty. Lots of Barnyard. Really soft. Really nice sourness that builds with each passing moment. Balanced fruitiness. Lemon. Medium body. Nice and dry. Really soft. Really tasty!! So easy to drink... I liked this a lot.

Bottle shared with our Mes in my new local The Wharf, Macclesfield, Cheshire. Ace pub. Pale slightly cloudy yellow gold with a thin quickly fading white head. Aroma is funky and tarty gueuze awesomeness. Flavours has lemons, orange, gueuze stuff. Perfectly placed in the late middle of our session. A joy to drink. Lovely stuff.

I’ve had the pleasure of trying many iterations of dry-hopped Cantillon lambic- from the exemplary variants (Bier Circus Cuvee du 89, Monk’s Cuvee, Pikkulintu) to legacy Cuvee des Champions, to the current Cuvee St. Gilloise, the use of dry hopping makes for a very tasty and profound example of the possibilities of lambic production melded with other brewing staples. Hops tend to fade sharp and fast, however even in the decade old renditions, there is still evidence of the bitterness and hop oils present. Hazy, translucent pour with a nice head and minimal lacing, heavy acidity and slick profile from residual hop oils..Very similar to the single cask two year lambic, Cuvee combines the flatness of jonge lambic with the budding funk and acidity that comes with age. Two year was an ideal pick to dry hop, and the evidence is clear in this refreshing and savory pour.

@ Cantillon Quintessence. Hazy yellow colour, a lot of carbonation. Sour beer with notes of green apples. Dry and hoppy finish.

Hazy yellow with a small pale head. Aroma is grapefruit peel, peach stone, aged cheddar, barnyard funk. Light bodied, a little soft on the palate with restrained tartness. Taste is citrus peel, tart peach, dried citrus peel.

Sampled at DLD 2014. It poured a hazy amber color with a small off-white head. The aroma was of tartness, funk, some light fruits and more sourness. The taste was the same with a nice tart finish. Tasty.

Glass of one-off 75cl Cuvée St Gilloise@D&C Bxl 04/2014, courtesy of Chuck, grand merci. A millisecond of a n unpasteurised Hallertau/Bavarian pils nose tricks the palate into thinking it’s up for something mild and bland before the well-tempered tartness pierces through like August sun through damp clouds, received on the earthy lemon cake malt base. Mitigated aka cultivated Cantillon sourness, exquisitely balanced finish. An unusual, fascinating drink even by Cantillon standards.

Draught @ Ma Che Siete Venuti a Fa, Rome. As Cantillon St. Gillios Pours light golden with a fading white head. Aroma is sour, brett, barnyard, wood, grapes, sour green apples. Flavor of sourness, yeast/brett, wood, barnyard, green grapes, citrus, green apples. Medium body, soft carbonation, lasting acidic finish. 080414
