A new brew concocted by Jean Van Roy to celebrate the 2003-2004 Division III title for the local Union St. Gilles football team and its upgrade to Division II.

Cuvee des Champions is not a traditional ’gueuze,’ in that it is made from only two year-old 2001 lambic, not from a blend of older and younger lambics. It is also dry-hopped in the cask for three weeks with fresh Styrian Goldings hops. Re-fermentation in the bottle is achieved with the addition of a small amount of candi sugar.

Editor’s Note: Cuvée Saint-Gilloise is dry-hopped with Hallertau and is merged with this listing.

Sample at SRBG Grand Tasting. Pours a cloudy pale gold with a nice white head. Aroma of citrus and floral. Taste is lemon, apple, grape, funk, spice, and wood. Crisp and refreshing.

Bottle, 75cL. Home. This cork : poor quality... An orange opaque light brown beer with a big white head. Big bubbles on the walls, thin in the middle. Smoky aroma, wood, apple, acid, vanilla, herbs. Sourness starts light, then becomes stronger and stronger (dry end). Very light but steady sweetness. Light body, thin texture, soft carbonation, steady dry sour finish. Overall, another great Lambic from Cantillon. Dry hopping adds to the aroma. Nicely done.

750ml bottle. Tasted at RBSG grand tasting. Last pour from the bottle. Totally hazy golden color. Good thin white head. Nice lemony oaky aroma. Great bigger sour aroma, good complex lemon and oak. Medium body. Smooth, kind of creamy lighter carbonation. Wonderful smooth lambic. Some good mild funk on it.
