A new brew concocted by Jean Van Roy to celebrate the 2003-2004 Division III title for the local Union St. Gilles football team and its upgrade to Division II.

Cuvee des Champions is not a traditional ’gueuze,’ in that it is made from only two year-old 2001 lambic, not from a blend of older and younger lambics. It is also dry-hopped in the cask for three weeks with fresh Styrian Goldings hops. Re-fermentation in the bottle is achieved with the addition of a small amount of candi sugar.

Editor’s Note: Cuvée Saint-Gilloise is dry-hopped with Hallertau and is merged with this listing.

Yellow, orange, slightly hazy. Nice white head. Tart aroma, brett. Marked bitterness, long duration. Refreshing.

(Cantillon Cuvée des Champions) As Cantillon Cuvee Saint-Gilloise, 750 ml bottle at home, served into a tulip, ABV 5% Golden orange colour on the body, bright and just a tad hazy, with a tall white head, with okay retention, leaving light lacing around the glass. Nice floral aromas, some light grapes and wine-y notes as well. Very sour taste, at least during the first sips, floral notes, light cork/wood, grapes, very nice. Thin body with good carbonation, very refreshing with a light tartness on the palate. Good gueuze.

Vinatge 2014, en fût. Très funky. Une gueuze avec un excellent côté exotique. Très savoureux. Une de mes meilleures de Cantillon jusqu’à maintenant. Reste à comparer avec la version bouteille qui se fera sous peu.

Draft at Big Wood 2014. Pale golden. Beautiful nose. Apricots, funk, and hay, over citrus. Same notes in the flavor, slight herbal/vegetal. Nice and full body. Very tasty!

Saint Gilloise, bottled January 7, 2013. Pours a clear orange-gold with very small head that subsides. Aroma is very musty, spicy, and earthy, with spicy hops, cork, cedar, and citrus peel mingling with Mediterranean herbs, grass, peach, lemon zest, and autumn leaves. Taste is vinous and juicy but austere, with white wine, orange, and grain fading into serious oak and spicy/bitter hops, with a balanced sourness and faint fruitiness. Finish is quite tannic, with pronounced barrel notes. Fairly low carbonation. Very good.

75cl bottle as Saint Gilloise. Light golden with bubbly white head that leaves a nice looking ring of bubbles. Sour lemon, lemon peel, light grainy and funk, hay. Lots of German style hops, light green raw veggies. Light sour taste with a bitter touch, light sour finish. Great balance and the hops work really well here. Beautiful and complex beer. Draft at Big Wood 2014 at Brouwer’s. Bright hazy yellow, white head. Woody softness, creamy sour, round full filling sour. Just bloody tasty.

Very smooth sour. Slightly tart. Melts in your mouth. Barrel comes through but is mild. Could drink all day.
