Commercial Description:
A new brew concocted by Jean Van Roy to celebrate the 2003-2004 Division III title for the local Union St. Gilles football team and its upgrade to Division II.

Cuvee des Champions is not a traditional 'gueuze,' in that it is made from only two year-old 2001 lambic, not from a blend of older and younger lambics. It is also dry-hopped in the cask for three weeks with fresh Styrian Goldings hops. Re-fermentation in the bottle is achieved with the addition of a small amount of candi sugar.

Medium yellow coloured. Hazy. Has a white head, mostly lasting. Aroma of acid, sulfur, lightly acetic acid. Flavor is heavy acidic. Dry texture. Moderate astringent.

Bottle. It was my birthday today, and I had this while eating oysters at an oyster farm north of san fran; it was a really nice experience. Cloudy yellow-orange pour with some white head. Aroma is lemony tartness with a little bit of funk. Very citrusy. Flavor is the same, reminds of RR beatification, but not quite as good. Small amount of sweetness in the finish. It’s a good beer on a warm day. I also put a little bit of it on an oyster that I cooked; it was pretty tasty eating.

Bottle at EBF 2008. Hazy golden colour with a small white head. Moderate aroma and taste of sweet sour fruits and citrus. Lasting finish. Well balanced.

Capped and corked 750. Pours hazy gold with a thick but falling head. Aroma of lemon, fruit, grass. Light body and moderate carbonation. Lemony taste of orange rinds, cork, barnyard, oak. Sour dry finish. I’m left with the taste impression of chewing on a cork that has been marinating in lemonade for a rather long time.

Cloudy pale golden, moderate head, really nice lacing and retention. Aroma is very funky with strong notes of cheese, also has barnyard action, lemons, a bit of basement. Medium bodied, moderate tartness, quite drinkable with a light sweetness. Nice Gueuze except for the price.

750ml corked bottle@Plan B, Copenhagen. Clear yellow brown. Thin greyish head. Fresh citrus-fruity nose with a slight sourness. Notes of cellar, hay and wood. Flavor is acidulous oranges, fairly tart with more bittering hops than expected for the style. Some mineralic notes. Crisp. Dry citric, slight bitter ending. Utterly refreshing, high drinkabilty.

750ml bottle. Dull golden body with a nice, dense white head. Aroma has a pleasant, sourish, musty cellar note. Flavor is acidulous, fruitiness in the direction of oranges with a bitter twist in the finish. This is a pleasant, well balanced, relatively kind, but still true to the style Lambic.

gold pour with a small white head. Aroma of oak, dust, funky cheese, lemons. Flavor is up front dust, cobweb, dust, grapefruit, tobacco, spice, metals. Sour acidic finish, lots of carbonation.
