COMMERCIAL DESCRIPTION
A new brew concocted by Jean Van Roy to celebrate the 2003-2004 Division III title for the local Union St. Gilles football team and its upgrade to Division II.

Cuvee des Champions is not a traditional ’gueuze,’ in that it is made from only two year-old 2001 lambic, not from a blend of older and younger lambics. It is also dry-hopped in the cask for three weeks with fresh Styrian Goldings hops. Re-fermentation in the bottle is achieved with the addition of a small amount of candi sugar.

Editor’s Note: Cuvée Saint-Gilloise is dry-hopped with Hallertau and is merged with this listing.

Opened for Sour Day 2012. Picked this up recently at Binny’s, 2011 vintage. Poured into a Duvel tulip. Saint Gilloise pours a cloudy orange in color with about a half finger worth of tight white head. Nose is exceptional, you can definitely detect a good hop presence from the dry hopping, there is also lambic, some urine, and must. Flavor is less focused on the hops and more on the lemon. The hops are more in the background with some moderate funk. Light mouthfeel, light carbonation, heavy lactic acidity, and a long finish. Great beer that is a nice change of pace for Cantillon. I really like the hop character that St. Gilloise and Cuvée des Champions have, it’s a nice compliment to the lambic. Still prefer Cuvée des Champions more than St. Gilloise, but both are awesome.

Bottle as Saint Gilloise. Creamy White good mostly lasting head. Yellow colour. Moderate malty very sour aroma. Very sour nice flavor. Long great finish. Oily palate. Nice.

Pours a beautiful copper with a thin white head that lasted about 60 seconds. Slight ring and lacing. Small snifter at the Sybarite Pig. (On draft by the way...) Aroma is tight with sour fruits (green apples, light citrus, green grapes, starfruit) and funky yeasts. The taste is similar with the sour fruits, funky yeasts, hoppy finish. Damn good. Dry finish, tart on the back-end.

75 cl. bottle. Pours cloudy yellow with a tiny, white head. Aroma is sour with herbs, elderflower, hops, citrus, lemon, lime, grapefruit and vinegar. Taste is sharp sour, bitter, vinegar, balsamico, hops, unripe grape peel, sour apple, and is pretty dry. Despite all these crisp, sour and bitter things, the beer has a fairly thick body texture, and a low carbonation. Good stuff for sure!

Pours hazy copper with almost no head. Aroma is nice and classic gueuze-like. Lots of wild notes along with fruity notes. I get green grapes, vinegar, green apples, stable, dry champagne, grapefruit, stable leather and weak sulfur. Taste of apple vinegar, grapefruit, weak older hops, green grapes, skunk, weak sulfur and barnyard. Very refreshing and well done gueuze.

Draft at Churckey as St. Gilloise, 7/12/14. Pours a hazy peach color with a medium sized frothy white head. Good head retention. Aroma of soft tartness, stone fruits, peach, white grape. The taste is tart, bright funk, grapes, cherries, stone fruit. Medium bodied, low carbonation, lingering tartness.

Bue en bouteille de 75cl, couleur dorée trouble, joli col de mousse, effervescence importante, une bière assez extraordinaire, beaucoup plus facile à boire qu’une Cantillon Classique, attaque sur une pointe d’acidité citronnée et orangée, et ensuite cette acidité ce mélange à de l’amertume type pamplemousse, mais ça continue sur de l’amertume du Dry Hopping et là ça devient fou on a une attaque sur le houblon amérisant très forte et ensuite une belle attaque sur les fleurs jaunes et sur les plantes vraiment une tuerie !!

On tap at de Wildeman. Hazy golden with a white head. Sour fruity aroma, barnyard, funky. Taste is vineous, sour fruits, long sour aftertaste. Very nice.

Dry-hopped variation on Cantillon geuze, made for a socker club in 2004. No young lambic, the result being complex as ever, estery, sulphuric and funky as anyone will expect from Cantillon, through which a fresh, bitter hoppiness cuts. I usually don’t like my lambics too hoppy, but in this case anyone in favour of authentic lambics will surely make an exception, and so do I.
