COMMERCIAL DESCRIPTION
A new brew concocted by Jean Van Roy to celebrate the 2003-2004 Division III title for the local Union St. Gilles football team and its upgrade to Division II.

Cuvee des Champions is not a traditional ’gueuze,’ in that it is made from only two year-old 2001 lambic, not from a blend of older and younger lambics. It is also dry-hopped in the cask for three weeks with fresh Styrian Goldings hops. Re-fermentation in the bottle is achieved with the addition of a small amount of candi sugar.

Opened for Sour Day 2012. Picked this up recently at Binny’s, 2011 vintage. Poured into a Duvel tulip. Saint Gilloise pours a cloudy orange in color with about a half finger worth of tight white head. Nose is exceptional, you can definitely detect a good hop presence from the dry hopping, there is also lambic, some urine, and must. Flavor is less focused on the hops and more on the lemon. The hops are more in the background with some moderate funk. Light mouthfeel, light carbonation, heavy lactic acidity, and a long finish. Great beer that is a nice change of pace for Cantillon. I really like the hop character that St. Gilloise and Cuvée des Champions have, it’s a nice compliment to the lambic. Still prefer Cuvée des Champions more than St. Gilloise, but both are awesome.

Aroma: Stable, leather, fruit, vinegar.
Appearance: A foggy straw colored beer. A low white head with small lacing and good curtains.
Taste: Tasting sweet fruits, lemon peel, tea and grape-fruit seeds.
Palate: Low carbonation, a fresh texture. A medium body with a slightly dry finish.
Overall: Brilliant and balanced.

UPDATED: JUN 17, 2013 Beer Gonzo, Coventry. 750ml bottle- maybe the most expensive I’ve bought in the UK. Clear lager gold-to-hefeweizen-hazy with an enduring white foam. Have Cantillon gone all soft and namby-pamby and started brewing beers I actually enjoy?? Pussies. Aroma dank old lime and lemon left in the fridge a couple of weeks; deep cream of oak, champagne cork; freshly pissed-on urinal cake. Mellow, discreetly puckering lime, green apple and cream cheese/yoghurt-sharp taste with a cheesy old hop bitterness loitering in the background. It’s got that balance, creaminess and more-rounded-than-bone-dry lime jelly thing I associate with Drie Fonteinen. Good dry hop and curry leaf on the burp. World class lambic sessions. If there was a pub at the end of my road with this on handpull I’d be down there like a shot. Worth every penny.

Dry hopped Cantillon gueuze, must I say more? Excellent beer with a great mouth-feel and all around satisfaction. Typical tart, acidic gueuze flavor is complemented by a bitter, light citrusy punch.

Pours a hazy blomd with white head and no lacing. Aroma of funk, barnyard, grassy hops. Taste is funk, horseblanket, oak, litghtly vinous, grassy finish. Low body and low carb. Very good

2011 750mL pours a hazy golden/orange with a medium white head. Pretty mellow aroma, oranges, lemon zest, and barn yard. Taste is very tart and sour, lemon zest, oak, lots of funk, dry earthy hops on the finish. Yum!

A - Slightly hazy golden-orange with a finger of frothy white head. Fades normal. S - Sweet wheat, oak, vanilla, barnyard funk, tart green fruits, lactic acid, citrus hops, lemon zest, light sourness. T - Sweet wheat, oak, vanilla, barnyard funk, tart green fruits, lactic acid, lemon zest, light citrus and floral hops, light sourness. M - Medium bodied with moderate carbonation. Smooth with a funky, tart, sour finish. D - Fantastic balance and complexity, the hops are a great addition.

Shiny golden body and no head (after a fizzy few seconds). Bit of herbal hops, fruity sourness, not overly complex. Light sweet, fuller sourness, especially towards the end. Okay palate yet not much complexity. Drinks well enough. Okay, bit simple, geuze. (75cl bottle from Bierparadijs)

2012 bottle. Pours a hazy yellow with big white head. Aroma is grain, funk, some pear and a good amount of sour. Taste is dry, slightly hoppy for a gueuze with some fruit going on that is hard to pick out, hay and some other barnyard. Not overly sour.
