Commercial Description:
A new brew concocted by Jean Van Roy to celebrate the 2003-2004 Division III title for the local Union St. Gilles football team and its upgrade to Division II.

Cuvee des Champions is not a traditional 'gueuze,' in that it is made from only two year-old 2001 lambic, not from a blend of older and younger lambics. It is also dry-hopped in the cask for three weeks with fresh Styrian Goldings hops. Re-fermentation in the bottle is achieved with the addition of a small amount of candi sugar.

Lemon, leather, wood, cork, bamboo, lots of manure...driving through farm country. Tart, corky, apple skin notes, hints of leather. Good gueuze, fairly approachable.

Hazy blond color; huge head, very lively; wonderful fine perlage. Classic aroma, sour, elegant, cellar smell with a hint of citrus fruits. Weak mouthfeel, the sourness is not very strong, but it’s too much astringent, and the bitterness is too high.

Pours hazy orange with tiny head. Grapefruit and classic lambic notes. Gentle bitterness in the end.

(750ml Bottle, RBSG05) Cloudy amber body with minimal head. Aroma is sour, horseblanket, some barnyard, cheese. Taste is quite sour, light sweetness, lemon. Nice yeasty barnyard in the finish. Light body with medium carbonation. No question that this is a Cantillon.

Bottle at GBBF Cloudy gold lambic. Good oaky nose and the sourness in the mouth with the citric acidity is pretty intense. Best straight lambic I have had so far. Drinking this after all those heavy American IPAs is just so refreshing.

Deep hazy orange, not much head. Intensive aroma of leather. Sour, fruity, flavor of grapes and red currant.

Pale yellow, hazy, not much head. Typical sour, dry Cantillon nose. Very bitter for a lambic, double amount of hops is used here. Double IPA with lambic one would say.

75 cl bottle. Pours a huge head. Sulphury, citric aroma. Only faintly sour, sulphury and oaky flavor. Low on carbon. lemon, honey and mandarin. Just a bit thin. Someplastic in the aftertaste. Complex geuze, not the best Cantillon can offer, but it grows on you while finishing the bottle.

Hazy golden colour with no head. Light sour hoppy aroma and a light sour bitter dry taste. Medium to full body and a dry finish.
