A new brew concocted by Jean Van Roy to celebrate the 2003-2004 Division III title for the local Union St. Gilles football team and its upgrade to Division II.

Cuvee des Champions is not a traditional ’gueuze,’ in that it is made from only two year-old 2001 lambic, not from a blend of older and younger lambics. It is also dry-hopped in the cask for three weeks with fresh Styrian Goldings hops. Re-fermentation in the bottle is achieved with the addition of a small amount of candi sugar.

Editor’s Note: Cuvée Saint-Gilloise is dry-hopped with Hallertau and is merged with this listing.

75cl bottle, from Geers or Cantillon directly, can’t remember. Labeled "Cuvée Saint-Gilloise". Poured in classic "Ginder Ale" glass. Pours dusty orange, minimal firm head. Sour nose, dusty attic, grassy manure, green apples and sour candy. Keep trying to smell the hops but can’t find any in there. Aroma is lipsmacking Cantillon tartness and funk. Very astringent, but I’m not the most seasoned geuze drinker. Obviously mostly sour, but there are worse out there. Palate is good, quenching, dry but not puckering. Would like to taste a more thoroughly dryhopped version.

Pours in a cloudy amber color with a thin line of white head. Aroma; Apple, pear, apricot, grapes, lemon and funk. Flavours; sour green apples, pear, lemon, earth tones and a touch of hay with a dry finish. A very good sour beer.

Botella 75 cl tomada en Cimmeria octubre 2015. Embotellada en 09..03..2015 hasta 03..2025. En etiqueta como cuvee Saint gilloise. Geuze bastante buena con refinados ácidos. Cuerpo medio de 5 vol. Para repetir.

Bottle as "Cuvée de Saint-Guilloise" at Cantillon, Brussel. Aroma of sour fruits, peach, gooseberry, oak, some apricot, funk, some hoppy notes. Flavour is medium to heavy sour with a hint of hoppy bitterness in the dry finish. Body is medium, pleasantly carbonated. Excellent balance and high drinkability. Lovely complex fruity Lambic.

Bottle shared as ’Cuvée Saint-Gilloise’ at Gollem Amstelstraat, bottled in February 2014. Hazy, golden yellow with a medium large, frothy, white head. Slightly funky, sourish-fruity aroma of lemon, gooseberry, white grapes and oak. Slightly funky, sourish-fruity taste of lemon, gooseberry, white grapes and oak. Thin to medium body, slightly effervescent and astringent mouthfeel, flat carbonation. Good!

2012 750ml shared by Ryan. Completely awesome aroma. Peach, apricot..wow, just awesome. Phenomenal world class sour. So much more depth than a US example, nice wheat touches. So good, fruity peach apricot tones. Perfect lambic.

Clear pear apple aroma with a nice funk background, musty, a bit of barnyard and leaf. Taste is your traditional easy going gueuze with a bit less of tartness, with an added dimension of pear and earthy hops, fits very well, and to me best consumed fresher.

Hazy straw golden color slight fizz and white head reduces fast. One in mouth tartness, with aromas of white wine and lemon citrus. After initial tartness it fades to the oak and funk. Some barnyard and hay. Very complex finish, great beer.

[2015] 750ml bottle at TDD brewpub. Hazy amber with a frothy white head. Flavors are hay, oak, lemon, grapefruit peel, stone fruits and dust with herbal and funky notes. Light to medium body, good carbonation, velvety texture.

From tap at Chez Moeder Lambic Fontainas, as Cuvée Saint-Gilloise 2009. Hazy golden orange color with off white head. Aroma is wood, yeasty, funky, barnyard, plastic notes, citrusy fruity, floral. Sweet and light acidic taste. Medium oily body with soft carbonation.
