A new brew concocted by Jean Van Roy to celebrate the 2003-2004 Division III title for the local Union St. Gilles football team and its upgrade to Division II.

Cuvee des Champions is not a traditional ’gueuze,’ in that it is made from only two year-old 2001 lambic, not from a blend of older and younger lambics. It is also dry-hopped in the cask for three weeks with fresh Styrian Goldings hops. Re-fermentation in the bottle is achieved with the addition of a small amount of candi sugar.

75cl bottle, from Geers or Cantillon directly, can’t remember. Labeled "Cuvée Saint-Gilloise". Poured in classic "Ginder Ale" glass. Pours dusty orange, minimal firm head. Sour nose, dusty attic, grassy manure, green apples and sour candy. Keep trying to smell the hops but can’t find any in there. Aroma is lipsmacking Cantillon tartness and funk. Very astringent, but I’m not the most seasoned geuze drinker. Obviously mostly sour, but there are worse out there. Palate is good, quenching, dry but not puckering. Would like to taste a more thoroughly dryhopped version.

Draught @ Ma Che Siete Venuti a Fa, Rome. As Cantillon St. Gillios Pours light golden with a fading white head. Aroma is sour, brett, barnyard, wood, grapes, sour green apples. Flavor of sourness, yeast/brett, wood, barnyard, green grapes, citrus, green apples. Medium body, soft carbonation, lasting acidic finish. 080414

Bottle @ Irreale. Pale golden and hazy colour with a white head woth short duration. High presence of yeast in the aroma, also a good presence of brettanomycces are present with slightly citrus. Flavor is quite similar as aroma with a long acidic mouthfeel, bretts are highly present. Acidic final with a mild dry mouthfeel.

Poured a medium and cloudy orange color with a smaller sized white head. Aromas of horseblanket, leather and musty. Tastes of green apples and light lemons. Nice lighter sour and tart finish. Very good

Appearance: Golden colour with a white head.
Aroma: Sour, brett, hay, wheat.
Body: Medium body and carbonation.
Flavour: Sour, fruit, orange, rather sweet.

Birra davvero eccezionale, con un’acidità intensa ma meno invasiva rispetto a molte altre gueuze, accompagnata da profumate note floreali, erbacee e una sfumatura citrica, finale lievemente amarotico che si intreccia con una punta acida, secca e dal tono legnoso molto molto accattivante. Superlativa!!

Pours a heavily hazed golden with a medium white head that leaves really good lacing. Nose is hoppy and funky, woody. Freshly cut hay. Taste is tart but not too much, dry. Noble hops flavors and wheat, lemony. Finish is herbal and lightly bitter. Acidity is really well controlled, body light and carbonation moderate. This drinks really, really well. One of the classiest Cantillon out there, yum!

Draft. A very tart nose up front. Kinda flat pour. Minimal to no head. Taste is just tart with not much complexity. A light barnyard character but not much else. Tasty but I’m not sure I’d pay high prices for this again

A - pours hazy light apricot with a light ring of head. S - ooh funk-y! Musty wet oak. Almost cheese funky. Orange blossom. Wet musty orange grove in the rain. With a nice urinal cake! M - tart. Thin and wet mf with a dry bitter end. T - musty lemony/orangy juice. Wet oak. Floral and citrus. Funky eggy awesomeness. Dank musty hops as well. O - a nice loon. 4.0
