A new brew concocted by Jean Van Roy to celebrate the 2003-2004 Division III title for the local Union St. Gilles football team and its upgrade to Division II.

Cuvee des Champions is not a traditional ’gueuze,’ in that it is made from only two year-old 2001 lambic, not from a blend of older and younger lambics. It is also dry-hopped in the cask for three weeks with fresh Styrian Goldings hops. Re-fermentation in the bottle is achieved with the addition of a small amount of candi sugar.

Editor’s Note: Cuvée Saint-Gilloise is dry-hopped with Hallertau and is merged with this listing.

Clear orange golden colour, firm white head. Floral aroma, citrus, lemon peel, lime juice, funk, light rubber, some horseblanket and lactic acid. Light sour flavour, lemon juice, fresh lactic acid touch. Sour finish, citrus, lemon juice and malts. Lovely.

[2015] 750ml bottle at TDD brewpub. Hazy amber with a frothy white head. Flavors are hay, oak, lemon, grapefruit peel, stone fruits and dust with herbal and funky notes. Light to medium body, good carbonation, velvety texture.

From tap at Chez Moeder Lambic Fontainas, as Cuvée Saint-Gilloise 2009. Hazy golden orange color with off white head. Aroma is wood, yeasty, funky, barnyard, plastic notes, citrusy fruity, floral. Sweet and light acidic taste. Medium oily body with soft carbonation.

Bottle. Lot #A1234. Colour...lightly hazy amber with a thick white head. Nose... fruity and funky with horse blanket, stinky French cheese. Palate...also quite funky but dry as well and very tart. The mid palate is dry a and the finish is clean, crisp and vibrant.

11-SEP-2015, draft @Cantillon, with Ulkløbben. Hazy yellow with lasting, White head. Tart, wheat, straw, brett. The hops can be sensed more than tasted. Dry hopped feeling with a Little grass.

Small Saint-Gilloise sample @ Cantillon. Pours golden with long-lasting white head. Both aroma and taste are lemon, green apples and hints of orange. The aftertaste is sour and bitter, being the former more dominant. Light/medium mouthfeel, good carbonation. Nice balanced brew.
