Pitcher @ the brewery. Pours dark orange. Aroma of candy sugars, caramel, caramel cloying the mouth. Not much going on because of the flatness.

Sampled at Cantillon on public brew day. So this is probably one of the best faros to date.. but that’s only because there’s that insane Cantillon sourness beneath to balance out some of the sticky sweetness of the faro.. Much rather have the straight lambic.. faros always sems oily and cloying to me.

Aroma: some honey, minerals, mustiness/earthiness, carmel
Appearance: reddish-brown, little to no head
Flavor: raw grains of sugar, candy sugar, lite tartness, some summer fruits--like cherry and cherry stems, light honey
Palate: fruity tartness and sweetness, nice raw sugar aftertaste followed by a slight lacticness

Dirrect from the hand tab at Cantillon since they say it cannot be bottled. Color is hazy brown with and nice off white head that stay a long time. Aroma is of malts and caramels. Flavors of malts and mostly of very natural fresh sugar cane, almost like there drinking sugar cane juice itself. With a little sweet and refreshing finish. This was very different and very pleasant.

My first authentic faro. Dark unclear amber with a large but dissipating head. Sweet aroma, a little on the mild side, sugar, slight funk and no sourness. The flavour is very sweet without being cloying, some funk, orange and peach also. The palate is quite light.

(Draft. 03/2006) I was able to sample this in two varieties -- a light faro delivered by gravity in the brewery and a rich, dark faro also delivered by gravity at ’t Spinnekopke. Both were wonderful. The lighter variety carries forth notes sour acid with just a hint of candi sugar. Sweet up front and sour on the back end. The dark variety was a real treat. Aromas of dark candi sugar melded perfectly with the lambic aromas typical of brettanomyces. The result was a wonderfully complex treat that complimented a variety of delicious dishes sampled that evening.

Cask at Moeder Lambic. Pours deep amber with no head at all. Flat as can be. Smells like pear juice. Flavor is sweet with just a hint of sour. Mouthfeel is smooth and creamy. After a talk with the brewers at Cantillon about this beer, I realize that it is a bit of a gimic. Not really impressed and won’t be searching for any more Faro again.

Tap @ Moeder Lambic. Pours hazy orange and still. Aroma is sweet and sour, maybe grapy. Taste starts sugar sweet with some sourness trying to peek out. More caramel later on. Some acetone abrasiveness. Better than Girardin by some margin.

One of the most beautiful Lambic experiences. Something sensational. I had it at Cantillon Brewery and at Moeder Lambic Fontainas. It is extremely particular thanks to the addition of rock candy. A great balancing between the sharp and sweet. An intense play of flavours giving us a special sensation. Absolutely to try whenever is possible. Served directly from the jug.
