Had this at Chez Moeder Lambic, Fontinas Pl location, Brussels, Belgium 16.12.11 Pours light amber with a white head. The aroma reminds me of walking into an old charity shop, there is old clothes and dog eared books and records, this is the most interesting thing about the beer, the aroma is fascinating. However the taste is frankly something of a disappointment, it is sweet, thin and rather watery. I tried to have this at the brewery a few years ago but was repeatedly steered away from it and told by Jean Roy (I think) that I shouldn’t try that I need to have the proper stuff, despite repeated requests I seriously wasn’t allowed, instead given some of the ’proper stuff’ I’m beginning to think that when offered up against many of the other Cantillon beers his advice was spot on. To be honest I’ll probably be frowned at for saying this but I preferred the Timmermans Lambic Doux which rather surprises me. A7 A4 T5 P3 Ov12 3.1

Draft at Moeder Lambic. Slightly cloudy yellow amber pour, small bubbly off-white head. Fruit, leather, lots of sugary sweetness, slight sourness in the background. I am not that impressed, but then I again I really dislike sweetened beers.

7th March 2010. Draft at Moeder Lambic. Cloudy brown beer, thick frothy off white head. Milky sweet beer - very sweet. Sweet prunes and figs and plums and then more milky sweetness. Just a little tartness in the background but it’s swamped by the sweetness. All this is good but then there is some off putting paint in there as well and this just makes things a little too weird to score any higher.

Draught at Chez Moeder Lambic Saint Gilles, Brussels, Belgium august 2011. Dark orange, almost clear, no head. Dough aroma. Sweet, fruity..maybe a bit pumpkin aroma. Nice, exsiting taste.

Cask at Moeder Lambic. Pours deep amber with no head at all. Flat as can be. Smells like pear juice. Flavor is sweet with just a hint of sour. Mouthfeel is smooth and creamy. After a talk with the brewers at Cantillon about this beer, I realize that it is a bit of a gimic. Not really impressed and won’t be searching for any more Faro again.

Bottle (Cantillon, Brussels)
Hazy orange, no head. Raw woody and sour aroma. Burnt sugar in the taste. Sticky heavy sourness, slightly grapefruity bitterness, and a bitter sticky finish. My worst ever Cantillon, despite being in the best surroundings ever for drinking it. Just didn’t have the lifting lightness that I expect from Cantillon, alas. A dour beer.

Brownorange.
Elderberry aroma with notes of muscovado sugar. Some acid.
Elderberry flavour with notes of wort and icetea. Sweet.
For me Faro is a good way of ruining lambic !

At the brewery..... A little to sweet for my palate. The addition of sugar mellows out the funk, and makes it and easier, mediocre brew.

This is a true Faro, that is, not available in bottles, though a guided tour (4 E$ with 3 lambic samples) of the brewery will give you the opportunity to try this one. They add brown sugar to a 1.5 year old unblended lambic. The harsh Cantillon Gueuze makes for an interesting base and the added sweetness helps smooth out the rough edges of the base lambic.

Künstlich süßer Antrunk, zum Glück stellt dies den süßesten Teil dar. Das Faro wird milder und schmeckt deutlich holzig, leider weiterhin auch etwas künstlich. Der Nachgeschmack geht in Orndund, immerhin ist hier auch mal eine leichte Säuerlichkeit zu erkennen.
