Bottle at home 2014 vintage. Aroma is barnyard funk, hay. Foamy white head thats quite active on an, unsurprisingly, apricot colour body. Taste is medium sour, medium tart with hints of sweet and apricot on the short finish. Lovely beer and well balanced, not overpowering in any sense.

P: Hazy orange with a thin white head that sticks and never leaves. S: Lots of oak, barnyard smell, loaded with apricots, tropical fruits, floral yeast and a bit of wheat. T: A ton of apricots that coat your entire mouth like freaking apricot syrup, you get that oak, yeast, wheat, some sugar but the apricots just dominate with greek yogurt tartness to finish it all. M: Really light with soft carbonation and light sourness. O: An apricot sour beer with nothing odd, just damn good.

Bacterial (1721) - Twin Cities, Minnesota, USA - NOV 7, 2014
Bottle shared with my lab, put cashed form the brewery a few weeks ago. Some liquid between the cork and cap, which I though was a little odd. Hazy yellow pour with a slight Amber orange tinge to it. Nice nose, fruit and a bit of funk. Sour, but not highly sour. Nice apricot in the taste as well.

Sample of both 2013 and 2012 bottles at (Hopp)Kurtkeller 016: Cantillon-tastic 01 on 10/11/2014. Pale orange color with tiny bubbles attached to the glass, and a medium thin foamy white head that recedes steadily to a film. Small patches of lacing on the glass. Aroma of funky fruit, yeast and wheat. Light-bodied with flavors of apricots, citrus, yeast and malt. The finish is fruity with an apricot and floral yeast aftertaste. Excellent beer all around.

Bottle, 2014 vintage. Less than 3 months old. Pours a hazy glowing orange-gold with small white head. Highly aromatic and fruity nose, there is bright apricots upfront with citrus and the usual Cantillon barnyard funk. Taste is well balanced. Lactic acidity is not too intense per Cantillon standards. Fruitiness is sweet and sour. This one is better fresh from the few expériences I’ve had. Palate is light, carbonation is rather low (only light flaw). This isn’t the most complex lambic, but very few flaws and the nose is amazing.

Bue en bouteille de 75cl. Pas trop fan des lambics à la base, l’abricot ne fait que rajouter de l’acidité au tout.

Bottled in 2012. Wow. Pours a hazy golden with a resilient layer of cream colored head. Aroma and taste of fruit, sour, dry wine. Amazing balance and taste.

(On tap at barVolo for Zwanze Day 2014, Sept 20 2014) Hazy medium gold with a dense, lingering white head. Aroma apricot, blue cheese, grass, floral, lightly sour. Palate initial light vinegar and lactic yoghurt mixed with some fresh apricot, cheese and woody notes in the middle, lingering lactic acid and a dried apricot aftertaste. Very clean finish with no bitterness. Light body and very soft carb. The apricots aren’t overpowering here but they’re still prominent yet held in perfect balance so as to not overwhelm all the other complex flavours going on. Just delightful to drink, an amazing beverage for a sunny patio (or anywhere).

Has a hazy, orange/peach colour. Sharp aroma with some vinegar and apricot syrup. Very smooth and easy to drink for a sour beer. It’s tangy but sugary sweet too giving some balance.
