A: The pour from a 2009 bottle is a hazy light golden yellow color with very minimal white foam on top. S: An intense nose as always. Tons of lactic acidity, lemons, apricots, and green apples. The oak is a bit more pronounced than usual with a really nice wet hay and barnyard funk. T: This is certainly one of the most acidic and sour Cantillon beers out there. A very sharp lemony tartness followed by some apricot, but not overly intense. Wonderful wet and musty funk and heavy oak components. M: Light on the tongue but a powerful sourness that is tongue-buckling to say the least. A nice dry and tannic finish. D: Easily one of my favorite beers (from Cantillon or otherwise). I could drink this stuff all day, and I’m glad to have another bottle.

At Delirium Café in Brussels. Clear redgolden colour, quickly disappearing head (as expected) Aroma quite tart and acidic, clear brettanomyces and only a hint of apricots. Taste rather bland and thin, apricot has trouble coming through. Short finish, only the acidity lingers. Not unpleasant but I expected much more of it. Guess the bottle served was over it’s top.

750mL 2007 bottle at Max’s on Broadway in Baltimore. Pours a hazy, cloudy yellow with a bit of fluffy head. Aroma is very tart and acidic, with some yeast. Taste is initially dominated by tartness, fading a touch to a balance between acidity and tartness that is somehow balanced by a somewhat dry apricot flavor. Finish is very bitter, with apricot and citrus peel.

Bottle, vintage 2005. Pours a hazy golden orange with a small white head. Typical aroma of Cantillon, tart with earth, grass, citrus, dry. Unfortunately, almost all the fruitiness was gone, still a descent beer. Next time I will try a newer bottle.

Shared this with my wife at the Delirium in Bruxelles. Golden with a white head. Really sour aroma with notes of dust. Champagne-ish palate. More sour than any peach. Really sour and surprisingly bitter.

Pours muddy amber with a small off-white head. Aroma is tart, fruity, peach and leather. Flavour is very acidic, citrus, grapefruit and peach.

UPDATED: FEB 6, 2011 ’09 pours hazy gold-orange, crackling thin white head. Tart, wheaty nose, bracing sourness and acidity that masks any consistent fruit. More peach in the flavor, still lemon, must, and light barn with a strong, Biting acidity in the throat. Of course its damn good, that’s Cantillon, but it’s a little simpler than typical for them. I’d also prefer more fruit here.

Had this a handful of times, never understood the love, then had a bottle of unknown vintage (DAMN!) thanks to Brad... alongside Beatification b2 as best beer of the night (30 or so samples). Amazing fruit depth tucked in behind the lambic, makes my memory of Blabaer too sweet.
