Bottle, 2011 version. Hazy gold with a white head that fades to a coat. Aroma of wheat, apricots, almonds, vinegar. Taste has apricots, apple vinegar, lemon. Some seeming sweetness underneath the sourness before a dry and slightly woody finish. Quite carbonated, but underneath there’s a light kefir-like texture. Subtle flavours under the sourness and very refreshing. Curious how the apricots pop in and out of prominence on the palate.

2011 bottle, lightly hazy orange-yellow, whitish cover. Aroma is peachy, fleshy fruit, lightly, faint tartness. Taste is nicely sweet, fruity, flesh stone fruit. I think it is a tasty beer, I would have personally preferred more tartness.

2008 vintage - Pours orange with a light white head. Aroma has notes of floral notes, fruits, berries and malts. Taste is sour and has notes of berries, fruits and spices. Finish is dry and sour. Okay, but not the best Cantillon I’ve tasted.

Bottled: August 18, 2011. Poured into a tulip glass.
A - This body has a cloudy, almost syrupy appearance to it. The color is somewhere between gold and pale orange. There was a short lived white head that led to some tight edging. Swirling yields some lively carbonation and some lacing. Looks fantastic!
S - As soon as I popped the cork I could smell the apricots. Super intense apricot aroma. It smells more like the dried variety than fresh apricots, as it almost has some candy notes to it. The finish is fairly acidic with a touch of brett funk. You can tell this is going to be a sour beer.
T - More of that dried apricot sweetness. Just a massive fruit presence. The finish is sour and acidic. Not a lot of funk or brett flavors to speak of. A bit better than the aroma.
M - Very lively and spritzy. The carbonation is perfect, and the body has some weight to it which is great for these flavors.
O - This is the best fruit lambic I have ever had. It really captures the apricots, and I can’t imagine aging this any longer as the fruit sweetness is perfect. However, its not as mind shattering as I thought it would be. Is it worth $28 and the hunt of landing a bottle? Probably not...but it is delicious and really well made.

Bottle, thanks Dak for sharing! This beer The apricot is very present in its aroma right off the bat. The apricot also comes through on the palate. The head seems to be present only on the outside of the pour. The color is a light good representation of the beer. Sour, not too much, but definite a good level for the fruit in the beer. Amazing.

Bottle. Stored for a week on its side and then upright for 3 days. Perhaps it should have been upright longer as i get a strong dustiness to the beer. Cloudy apricot colour with a soft white head. Soft, lightly sour fruit scent. Sourness is strong at first but then becomes as much a part of each sip as the solid apricot flavour. As stated a little dusty and a sense of yeast. Very nice and enjoyable. Pricey though! Had to go back in to add a comment. It seems like the creamy apricot gets stronger and tastier with each sip.

17/12/2011 Ma che siete venuti a fà (tap). Bevuta a Birre sotto l’albero 2011. Dorata, torbida, schiuma bianca abbastanza pronunciata, molto persistente. Al naso ha il classico acido da Cantillon, un po’ sporco e tendente al citrico con una punta di acetico, che nasconde i sentori di albicocca. In bocca è acida, non eccessiva come altre Cantillon, abbastanza ben bilanciata, ma l’albicocca fatica a venir fuori. Corpo medio, carbonazione corretta. Migliora sorso dopo sorso, ma delude un po’ le attese.

Bottle shared by birchstick. Thanks a lot Jon! 8/18/11. Pours hazy orange with a small white head. Aroma is lemon, barnyard funk and maybe a hint of peaches. Flavor is vinegar, funk, apricots and tart lemons. Medium bodied with a dry finish.
