cask@Chez Moeder Lambic – über-fresh 2011 version, made only a couple of days ago: murky yellow, light orange with a super firm lambic-head which sticks around even after you have drank all of the beer, smell is fantastic, pure apricots, not tart or sour but just pure apricot, taste is incredibly dry, jam-packed full of yeast, almost flour-like, initial taste is tart, minor barnyard & hint of lemon, soaked into the mouth filling thick tart/wild yeast/flour-taste & body, aftertaste is a sudden and unexpected resurgence of fresh apricots, no real sourness has even developed yet here, liking drinking straight from the cask at the brewery which is more or less what this is, curious as to how something as this would develop because this young, it is still completely off the beaten path

Sample glass at Cantillon in Brussels. Light hazy golden yellow with light head. Very straightforward with little yeasty flavours matched with a sour base. Very nice.

From L’autre Oeil. Bottle. Pours very light, yellowish, very small and light white head with a pretty good retention. Looked extremely fizzy (3) Aroma is a bit overwhelming on the side, as far as sourness-to-come is concerned, but apricot is still pretty perceptible (....obviously). Taste is borderline overwhelmingly sour with an heavy dose of apricot == things becomes interesting when you can taste the subtles wine, wood and vanilla. You have to work, though. The finish is probably where it gets even more awesome, with the wood taking as much place as the apricot. (8) Really watery mouthfeel and reasonable carbonation -- let’s face it, to much carbonation on this one wouldn’t work at all. .... Extremely sour.(4) The Foufoune is great. Still, you have to know what you’re ordering/drinking first - accept the sourness. I’m happy I haven’t drank this one 12 years ago, as I wouldn’t have fully appreciated it. (15)

Drucken på fat på Mikkeller Bar. En riktigt tuff lambic. Två år gammal som fått dra med aprikoser i två månader innan buteljering. Riktigt stram, liten sötma, inte mycket aprikossmak. Snarare syrliga citrus frukter, bra beska, den där sträva syrligheten från omogna äpplen. En fantastisk dryck.

UPDATED: NOV 16, 2011 (750ml bottle). We had an ’05 and ’08. I ended up rating the ’08 because it had more of the apricot and was considerable more sour than the ’05. Pours a hazy light golden color with a slight white head. Aroma is dried apricot, vinegar, funk and wood. Taste is super sour and a nice, gentle apricot flavor. Medium bodied with a dry, woody finish. This was a great beer and one of the stars for me on a day that many big, big beers made an appearance.

’09. Bottle at Moeder Lambic in St. Guilles in Brussels. Golden yellow color. Medium white head. Lacy. Smells sour but somewhat similar to the lambic from the same year (I am also drinking it right now). ARoma is also nice citrus fruit of lemon. Head starts to disappear at the end. hits my mouth puckering but then balanced out perfectly by the sweet apricot. Wet finish also balances out the dry sour start. Finish is super long and leaves a balanced sour/touch of sweet. I get a lot of lemon through finish as well. Touches of light light caramel come through early. Really really a gem.

Big pour (it should’ve been for $12!) into a chalice at Brasserie V - Pours hazy light amber with a thin ring of white head. Smell is sour as hell and really acidic, but with a light, gentle apricot/peach note.Taste starts sour and fruity, then slowly builds into more and more tartness. Wow. The interplay between the intense sour and the gentle fruit is really something. Light and slick, with carbonation that sticks on your teeth. I felt like I lost a lot of enamel drinking this one, but it also blew me away.

Bottle via trade. (2010) Shared on my birthday with friends. Pours a hazy orange with frothy head that quickly dissipates. Aroma is heavy on the funk/sour with some lemon, peach and very noticeable apricot. The taste is apricot at the front with then a great deal of lactic acid sour with some lemon and finally more apricot at the finish. Overall, an excellent sour. This is my favorite Cantillon to date with great fruit and sour. Will try to seek this out in the future with a more age on it to compare.
