Have had 2 of these. First was a 2001 bottle, second was a 2009 bottle. The 2001 was still amazingly sour. 2009 had much more apricot and a lot less sour. Both would be categorized as a couple of the best beers I have ever had, but the 2001 was worth it.

In bottle at the 21st Weekend of Spontaneous Fermentation. Pours a light golden colour with a decent white head. Aroma of apricot, lemon and oak. Similar flavours and nicely tart with a dry finish. Moderate carbonation and a foamy mouth-feel. Great!

Aroma is rather sour with some earthy notes and hints of apricot. Flavour is very sour in a nice way with earthy notes. Some apricot can be observed behind those. The bottle version (2007) was less sour and much more rich on fruity apricot. I enjoy the sour draught version more but your mileage may vary.

2005 bottle at Mikkeller bar. It pours cloudy light orange, with a thick white head. The nose is farmyard, intense lemony tartness, tart orange fruit (particularly apricot), touch of sulphur, almond and vanilla. The taste tart lemon, super-sour apricot, orange, peach, lactic acid and oak with an intense, long tart finish. Massively mouth-puckering. Medium body and fine, prickly carbonation. Wow the tartness almost ripped my face-off, but I liked it! Perhaps not the most complex Cantillon, but delicious nonetheless.

pours dark orange with a nice foamy head, micro CO2. Sour apricots on the nose. Drinks with intense and aggressive 10/10 sourness, 7/10-level tartness, barnyard funk, some puke sourness (for real), apricot jam in the background, mild bitterness in the end. Can’t say I’m a fan of this one - too sour, too funk, not enough sweetness / fruity flavour to enjoy.

Shared from two different bottles. Poured a hazy golden yellow color with a foamy, fuzzy white head. Aroma was apricots, fruit notes, tartness. Flavor was tart, with notes of mouth puckering tartness. This one was actually quite good. Very happy for those two people who brought this on over. Very refreshing.

Poured on draft @ Novare Res and orange yellow color with a gaseous head that dissipated very quickly. Aromas of sour fruit; peaches, apricot and a hint of wet hay funkiness. On the palate it punches right off with rich fruit flavors of apricot, peach and then rides the high carbonation bubbly flavors into a dry lingering sour finish. Amazingly refreshing and complex !

Pours hazy deep golden with a white head. Aroma has notes of apricot, peach, funky, tart and stable. Taste is light sweet and heavy sour with a long sour dry finish. Body is full, texture is thin to oily, carbonaiton is soft.

Hazy range body with a minimal white head. Fruity and citrus aroma. Taste is a good compromise between the sweetness of apricots and tartness of lambic. Nice one

2011 bottle, 04/13/2012. Pours hazy golden orange, thin pillowy white head with large bubbles, recedes to swirly surface foam, fine sheet lacing around the glass. In the nose, pungent apricot yogurt and horse blanket, sweetly sour, thin mustiness, malts. In the taste, upfront lemon tartness melds into tart apricots, acidic citrus, slight musty oak. Intense mouthfeel, very tart and dry, yet somehow constantly inviting the next drink. Very much a special treat, I prefer the more pronounced fruitiness of newer vintages compared to older ones.

Sample from a shared bottle @Schouskjelleren. Light orange colored, fully diminishing blond top. Strong lemon acidic aroma with a vinegary touch. Taste is substantially sour with a pleasant fruitiness underneath. Lemony and citrus zesty, hard to pin-point the apricot. Finishes bone dry with a mouth-drying sourness. Quite a challenging one.
