UPDATED: JUN 8, 2008 Bottle... Spring Brewtopia 2005... This beer rocks!... This is just a touch darker than freshly squeezed lemon juice and just about as sour. Don’t really pick up any of the apricot. Tastes and smells like lemon juice aged in oak. Lively carbonation. This is the most sour beer I have ever had. Kicks La Folie’s ass on the sourness scale... sorry New Belgium. Cabbage Patch Kids are honey-sweet compared to this. My nose and ball hair tingle each time I take a sip. I love spontanious fermentation. Liquid fun!

cloudy orange colour, few head, very complex aroma (vinegar, floral, rhubarb and apricot), very sour and light acid with a very brutal dry finish - not an easy beer (like all from Cantillon) and not the best Cantillon.

Bottle. Poured clear orange golden color with minimal fizzy white head that diminished slowly with fair lacing. Good tart apricot & yeasty aroma. Medium to full body with tingly sticky texture and soft carbonation. Moderate to heavy funky fruit flavor with a solid tart fruit and small alcohol bite finish of moderate to long duration. This is a standout lambic.

A Mes rate: 75cl bottle from Battersea Beer Festival! Quite impressed they had this to be honest. Typical lambic nose but with a little more funk than you would usually expect from Cantillon. I mean seriously funky. It’s almost James Brown. Wonderful hazy golden appearance. Taste is just what you would expect from Cantillon but where is the apricot? Ah there it is. Not even a hint of it until the finish then it hits you just hard enough to leave a glorious creamy and tropical aftertaste. A most unusual experience for a lambic. Yes all the characteristics you would expect are there but cream? And obvious sweetness? Very very heavy sediment for my final pour. Sim wouldn’t drink it. I gave it a good home. Great stuff and a little deviation from the norm.

75cl bottle at GBBF, August 2005. I could have sworn I’d rated this before, so didn’t make very extensive notes. Seems I hadn’t rated it. Fruity, but I’m not sure I would have spotted it as apricot had I not known, Typical Cantillon stuff. Funky aroma, very sour and tart, but clean and refreshing. Very gueuze like for a fruit lambic. Nice.

Seichter, dafür natürlicher und etwas süßer Fruchtgeruch. Im Antrunk überwiegt dann natürlich die Säuerlichkeit, die zwar gering startet, hier aber schon einen minimalen Essigton aufweist. Im Verlauf wird die Säure aber auch die Fruchtigkeit intensiver, hierbei behauptet sich die Aprikose erstaunlich gut gegen die nun intensive Säure. Die Essignoten flammen dann wieder auf, so wird die Fruchtigkeit dann doch noch in den Hintergrund gestellt. Zum Schluss dann auch Zitrone, im Nachgeschmack sehr trocken. Ein von vorne bis hinten intensives Bier, ich habe selten zuvor ein so saures und dennoch ausgewogenes Bier getrunken. Zudem kommen die Fruchtnoten gut zur Geltung. Genial! 13/14/13/14/13/14

Hazy golden lambic with a thin white head. Pleasant apricot aroma with horseblanket and cheesey notes. Good fresh apricot pulp in mouth, with some sour cherry notes, and lactic points. Excellent ! Sampled at Quintessence Cantillon 2005.

Bottle at Smokeless Joe’s. This was fantastic! Orange-yellow cloudy beer with thin white lace. Bright acidic aroma, oozes sweet apricot aroma, horseblanket, lactic/citric acid, leather. Flavour is very sour, apricot flavour, but very dry. Brett funkiness. Very tasty.

On tap at the Map Room in Chicago served in a goblet: Golden color with a lightly lacing head. Great subtle peachy aroma. Dry woody robust body with a great peach balance and a touch of sourness. Finish is tart and fruity, but not overly acidic like many lambics. This is a classy, refined, and enjoyable brew.
