250ml pour, on tap at Toronado in San Francisco, CA ($7.50!!). This one absolutely rocked me with its sourness. The bartender at first wondered whether I truly knew what I was ordering, I assured him, though I may look somewhat naive to the stuff (do I really?), I did in fact order it, picked it out from the hundred-or-so beers available, thus there is no need for a "warning". Somewhat irritated by this, I thought I should order two, one to savor at my table and one to unflinchingly pour down my throat in an instant while he watched, to show him what kind of stuff I am made of. A sort of beer geek spite. After having sufficiently convinced the bartender that I was worthy of a glass, he changed his tone and began to give me his own analysis, which I did not want or need. I took the beer back to my seat, and began drinking it. It took me about an hour to get through the 250ml, partly because it was so intense and extreme, partly because I wanted to prolong this glorious experience. Pours a hazy yellow-orange color with very little head. Ultra-sour, funky champagne-barrel musty woody aroma with a tinge of nondescript tree-fruit. Slightly citrusy perhaps. The flavors were punishingly sour, with only the slightest hint of apricot. It seems that the apricot, and its delicate and subltle flavors, are well-suited to provide a fruity background character to lambic beers, but cannot "shine through" the funk. Absolutely bone dry super tart finish. That was probably the most interesting aspect of this beer. The finish was abrupt and dry, but tickled the taste buds just enough to produce an intense craving for more and more. This is the hallmark Cantillon experience. This is the cornerstone of any sour beer addiction, in my opinion. It is sour candy for the adult beer geek. Amazing, as are most Cantillon brews. But this one had something extra special...

Unclear orange of color with a white head. A sour aroma with fruity notes. A flavor of fruits, sour and weak barn.

pours a yellow orange with small white bubbly head. aroma is very sour with lemongrass and apricot coming through. drinks very tart with tons of lemon, hay, apricot, and oak. very puckering and drinks like a very sour lemon aid with apricot added. i think more time on this would meld the fruit and the sour a little more. still very good.

2008. On tap at Capone’s. Pours a cloudy orange color with a frothy white head that clings to the side of the glass desperately. Aroma of apricot, peaches and mandarin orange. Flavor largely of apricot, with a sweet peach and orange ending. Serious funk and tartness. Nice beer.

Hazy nectar pour with a beautiful white frothy head that lingers amazingly. Aroma is explosive with peach and apricot nectar with backnotes of nectarine, mandarin orange, fresh pressed apple cider, and mild funky farm notes. Flavor presents itself in the form of super tart funken nectar-cider with acetic acid and huge peachy apricot notes. It really just makes me want to smile- yes I have a shit eating grin on right now. Tannic oak and musty barnyard present as well, allowing for further proliferation of the nectar oriented notes. Palate is bracing, rude, lacerative, and amazing. Mouthfeel is slippery, full, and billowy with fine bubbled effervescence. I’m blown away again...

Murky orange pour, nice 1 finger white frothy head. Aroma is beauteous; holds lots of fruit; apricot, nectarine, orange; smells like the fuzzy skin of a peach. Also notes of funk, and a touch of granny smith apple. Flavor unleashes a full assault of tartness on the tongue. Vinegar, apricot, cider, and acidity run rampant throughout the duration of the flavor. Palate is astoundingly rude; I had to brace myself for each sip, but I reveled in that difficulty. Wondrous lambic, but certainly not for the faint of heart.

Apricot in color, with a tiny ring of offwhite head. Aroma is essence of apricot and peach.. A fuzzy peach skin smell if thats even possible. A tad of funk as well in the nose. Flavor is Abrasively tart with peach vinegar. The Rudest Cantillon Ive Ever Had. not incredibley complex but perfects what it does. The peach is fuzzy and not cloyingly sweet with an awe inspiring presence of tart funk. Fuck...Yum..

Bouteille de 750 ml, chez David et Catherine. Merci Denis ! Arômes de lambic avec une touche d’abricots. Robe saumon et trouble, effervescence assez faible et peu de mousse. Très intense en bouche, on retrouve des notes de pommes vertes, les abricots, une touche de blé et la signature caractéristique du lambic. Finale très sûre (lactique et citrique) et très longue. Une très bonne bière, mais tellement sûre qu’elle doit être bue tranquillement et en petites quantités.

Bottle. Poured clear orange golden color with minimal fizzy white head that diminished slowly with fair lacing. Good tart apricot & yeasty aroma. Medium to full body with tingly sticky texture and soft carbonation. Moderate to heavy funky fruit flavor with a solid tart fruit and small alcohol bite finish of moderate to long duration. This is a standout lambic.
