COMMERCIAL DESCRIPTION
In the lambicworld you have mixed beer with winegrapes for centuries but what has never been done is to use grapes that have been infested with Nobel Rot. (Botrytis Cinerea)
Said and done! We contacted the controversial, austrian winemaker Willi Opitz.
Mr Opitz is very well known for his sweet wines and has won awards such as Late Harvest Winemaker of the Year. He has also made wines for McLaren,the department store Harrods in London as well as the wine Mr President that has been drunk in the White House both by President Clinton and President Bush. He is very innovative and has learning by doing as his motto and he seamed just enough Rock `n´Roll to go along with our new crazy idea. And just as we thought. When he gets the question he replies: " if you are going to make a new unique mixture of beer and wine, I am going to be a part of it!"
Mr Opitz has his vineyard in Burgenland near the lake Neusiedle. The mist and fog from the lake come in over the growth in the autumn mornings and make a terrific climate for the Nobel Rot.
The Botrytis forces out the water from the grapes and makes the sugars crystalize and contributes with a concentration of tastes that are just unbelievable.
The blending!
On the 19th of November of 2004 the little molded sweeties arrived to head-brewer Jean Van Roy at the Cantillon Brewery in Brussels. 35kg of Sämling and 35kg of Welschreisling. That is the same 50/50 mixture that Willi Opitz uses to make his "Beerenauslese Goldackerl".
A very sweet, slightly acidic dessert wine with different tropical fruits in both nose and palete. We macerated the grapes in a secondfill cognac barrel using a 2-year old, soft lambic with strong wine caracter.
The fermentation begun after a few weeks and went on for almost 3 months and created a wonderful, dry, extremely fruity botrytis lambic with lots of raisin and Cognac in the nose!!!
Bottling according to the Champagne Method!!
On februari the 8th the Botrytis Lambic was bottled. But still one more unique action was to be taken.
When making a "Gueuze" the blender adds a bit of young lambic to his old when bottling. The young lambic still has fermentable sugars and will create a secondary fermentation in the bottle. This method was created by the Benedectine monks in the 1530 ´s and is known to the world as "The Champagne Method".
In our Botrytis Lambic we have added the Wine "Beerenauslese Goldackerl" in the bottles both for fermentable sugars as well as the extra flavour. That of course will name our beer Goldackerl Gueuze.

Bottle at Akkurat, shared with tarheels86 and omhper, thank you gentlemen! Golden color (no kidding), no head or lacing. Aroma of tangerellos, white grapes and perfume. Taste is dry white wine, straw. Decent.

Bottle at Akkurat. Clear golden - white head. Nice wooden. Nice mellow sourness. Lots of grapes. Cognac. Nice wine grape flavor. Gooseberries. High dryness. Light sweet grape notes. Lovely - fantastic !!!

Pours a slightly cloudy pale yellow with a bit of light thin white head. The nose is strange, piney wet bark, cognac or a sweet dark spirit, some barrel and a hint of rum soaked berry. The flavor falls off in back, slightly rotten bark mixed with dark sweet spirit. Lightly sweet, tart grape, not really vinous at all. Medium creamy body, tight but light carbonatin, semi dry finish. Oxidized empty finish, probably past its prime.

Still amber color, smallest white bubble ring. Super earthy nose, immediately reminiscent of LH12 in the moderately sulfuric, woody aroma, rotting in fact, and moderate cognac. Really washed out profile, mainly citrus and cognac through the flavor, wood at the middle before the oxidation and citrus in the finish, cognac making a final presence. Lacks the coherence of the LH12, seems more washed out and even green by comparison.

Cantillon Goldackerl. 750ml bottle bought and consumed at akkurat and shared with rciesla and vtafro. Thanks fellas for lessening the blow for all these expensive lambics... Opened with a pop and gushed a rouch before being safely poured into the smaller cantillon tulip... Pours a shade darker than an apricot hue with a quickly fading soapy white head quickly becoming non-existent... Pale under-ripened fruit akin to a soft peach or apricot, while not too discernable in any sense. lambicy to a certain extent but not the classic cantillon funk as I am used to... Flavors are a continuation of the same with a white grapefruit, apricoty type of accentuation while lacking the funk mostly associated with cantillon lambic as formerly mentioned. Something white peppery or spicy about it as it warms which isn’t as apparent in the nose. Slightly warming given the abv without a doubt. Middleground from a body perspective. A little odd and too much for its own good. 7/4/8/4/15

750mL 2005 ed gold foil from Akkurat in Stockholm. The pour from the basket is a hazy, flattish, glowing yellow to gold with a thin, white head. Aroma is fleshy melon, jackfruit, meaty durian, dragonfruit, vanilla, pomegranate, raspberry sorbet, raspberry ice cream. Very unique. A little sweet and melon fleshy. Actually as it warms it smells like raspberry milkshake and berry pop-sickles. Taste is incredibly sharp, ultra sour, raspberry ice cream, raspberry and blueberry seeds. As it warms up there is more raspberry milkshake creating a sweet and sour playoff. Palate is tannic and tart as hell. Mild acetic spice comes out. Really hilarious. If you like raspberry, holy f##k. Probably one of the most interesting sours of all time- what a treat!

The head on this beer dissipates so quickly it’s intimidating. It smells like barley flour and acid. I didn’t know what to expect from a 10% blend of gueuze and Austrian sweet wine, but Swedish crisp bread was not a predicted descriptor.

Neither was champagne, which is what a random Swede said. It tastes slightly sweet with a little rye, a little heat, and a lot of barley flour. The finish is tannins and cayenne pepper. Over time the rye and pepper get harsh and the whole thing becomes a chore. A bizarre liquid.

Bottle@Akkurat Appearance: Hazy yellow with a very small head. Smell: Sour grapes, Hay, Funk, Citric notes. Taste: Vanilla, Grapes, Hay, Citric notes, Funk. Palate: Initial taste is very sweet and you can really tell this beer has been barrel aged but then a really kick-ass sourness takes over and kicks your ass. Quite filling asfell. Most unusual. This beer grew on me as i sipped away at it with a fellow ratebeerian. Very interesting!

Shared with kkearn at Akkurat. As he noted, we were lucky enough to try this along side the Goldackerl wine. The beer poured a golden body with a slight haze. Nose was earthy with wood notes and a slight musty aroma as well. The taste was sharp, acid but there were also some smooth fruit, grape notes in the taste as well. You get some alcohol notes and there is a bit of a medicinal quality as well. Overall this is a very interesting beer.

Bottle @ Akkurat. Lots of stuff going on in the aroma. Funky apple and a certain tartness. The taste is very complex. Bourbon sweetness, the fruitiness of a cider and the vinous bitterness from grapes. Not as sour as many other Cantillon beers.
