COMMERCIAL DESCRIPTION
In the lambicworld you have mixed beer with winegrapes for centuries but what has never been done is to use grapes that have been infested with Nobel Rot. (Botrytis Cinerea)
Said and done! We contacted the controversial, austrian winemaker Willi Opitz.
Mr Opitz is very well known for his sweet wines and has won awards such as Late Harvest Winemaker of the Year. He has also made wines for McLaren,the department store Harrods in London as well as the wine Mr President that has been drunk in the White House both by President Clinton and President Bush. He is very innovative and has learning by doing as his motto and he seamed just enough Rock `n´Roll to go along with our new crazy idea. And just as we thought. When he gets the question he replies: " if you are going to make a new unique mixture of beer and wine, I am going to be a part of it!"
Mr Opitz has his vineyard in Burgenland near the lake Neusiedle. The mist and fog from the lake come in over the growth in the autumn mornings and make a terrific climate for the Nobel Rot.
The Botrytis forces out the water from the grapes and makes the sugars crystalize and contributes with a concentration of tastes that are just unbelievable.
The blending!
On the 19th of November of 2004 the little molded sweeties arrived to head-brewer Jean Van Roy at the Cantillon Brewery in Brussels. 35kg of Sämling and 35kg of Welschreisling. That is the same 50/50 mixture that Willi Opitz uses to make his "Beerenauslese Goldackerl".
A very sweet, slightly acidic dessert wine with different tropical fruits in both nose and palete. We macerated the grapes in a secondfill cognac barrel using a 2-year old, soft lambic with strong wine caracter.
The fermentation begun after a few weeks and went on for almost 3 months and created a wonderful, dry, extremely fruity botrytis lambic with lots of raisin and Cognac in the nose!!!
Bottling according to the Champagne Method!!
On februari the 8th the Botrytis Lambic was bottled. But still one more unique action was to be taken.
When making a "Gueuze" the blender adds a bit of young lambic to his old when bottling. The young lambic still has fermentable sugars and will create a secondary fermentation in the bottle. This method was created by the Benedectine monks in the 1530 ´s and is known to the world as "The Champagne Method".
In our Botrytis Lambic we have added the Wine "Beerenauslese Goldackerl" in the bottles both for fermentable sugars as well as the extra flavour. That of course will name our beer Goldackerl Gueuze.

75cl bottle at Akkurat. 2005 cork. Talking of a unique lambic.. It pours a deep golden colour with a small white head that dissipates quickly. Aroma is deep and complex with sweet vinous notes, lemon zest, apricots, lemon funk and basement. Taste is similarly round and complex with a great interaction of the sweet grapes with the lambic to give a balanced and complex product. Notes of white wine, sweet liquor, lemon, dust and wood. Medium body with soft carbonation. Quite acidic most vinegary finish. It really delivers what promises in the description, a great beer and truly unique lambic.

Bottle. Golden hazy pour with white lacing. Cognac and wine grape aromas.. Flavor may differ slightly from a normal cantillon gueuze, has a wine and cognac influence. Still a nice beer.

Bottle sampled at Akkurat. Pours a clear muddy orange in color with a 1/2" of quickly dissipating white head. Nose is perfection. It is a beautiful union of wine and beer. There is a bouquet of bright white grape to this, not like Vigneronne, more like a dessert wine. Flavor is equally exquisite. The white grape profile isn’t as prominent , there is quite a bit of tartness from the lambic that is softened from the wine though. Light mouthfeel, spritzy carbonation, moderate acidity, dry finish, and a long finish. No hint of the 10.1% alcohol. One of my favorite Cantillon to date. This beer is exactly what the next generation of lambic should strive to be.

From a bottle at Akkurat. Pours clear lively blond with a finger of white head, quick dissipation. Smells sort of like mead, bit hot, sweet grain and a bit of tart lacto, bit of clove and berry. Taste big and funky up front, tart in the middle, and sweet on the tail. Berries and a bit of wild spice. Sweet and sour. Lighter bodied with very little alcohol heat. Unique, and a great experience.

The "F**k Yo Passport" Tasting. 750ml bottle into Cantillon taster.

Pours golden yellow, fizzy white head, thin ring. Nose is hay, funk, oak, and a nice vinous character. Flavor is lots of oak and vinous grape notes, not insanely sour, just right. Time has smoothed this one out completely. Light body, light carbonation, dry finish.

An excellent beer and worthy of the hype, IMO. I was sad when I finished my pour and fear I may never have this one again. Truly excited to finally try this one.

Flaska 2005 på Akkurat. Beslutsångest från den underbara ölkällaren som tillslut landar på denna raitet. Oj så njutbart! 10% alkohol? Den upplevs inte det minsta spritig. Botrytisdruvan kan anas. Nästan lite läskande. Absolut världsklass. Balans på syran. Härlig hype. Har aldrig varit med om liknande.

750 ml bottle. Slightly hazy golden with minimal white head. Aroma massive and complex, oak, sour funk, vanilla. Taste is massive and full, malt, sour notes,, funk, malt and lots of oak.

Bottle at Akkurat. Pours a hazy golden yellow color with small head. The nose is complex, with notes of petrol, honey, flowers, oak, vanilla, citrus, and funk. The palate is vinous but at the same time tart and sour (pretty amazing), with flavors of oak, honeysuckle, vanilla ice cream, lemon, citrus peel, some tannin, golden raisins, and dried apricot. Some heat in the finish from the Cognac barrels, and dry. Incredible stuff.

Bottle @ Akkurat. This is a strange gueuze but it’s amazing! So much wine in the flavour!
