Bouteille 375ml sous le nom de "Gueuze 100% Lambic Bio", courtoisie de mathieuc. De couleur dorée et voilée. Nez de levures sauvages fruitées sûres et acides (pommes vertes, léger de citron, traces de cerises sûres et d’abricots), légèrement rustiques et terreuses avec des petites notes épicées (poivre doux), légèrement boisé (bois humide) avec des traces herbeuses et de fromage vieilli. Moyennement ronde en bouche avec un pétillement moyen et légèrement croustillant ainsi qu’une texture légèrement champenoise et aux petites traces huileuses. Goût de levures sauvages fruitées acides et moyennement sûres (citron, moyen de pommes vertes, notes d’abricots, faibles traces de cerises sûres et de raisins verts), moyennement rustiques, légèrement terreuses et aux petites traces épicées dès l’entrée en bouche auquel se rajoute de faibles notes de fromage vieilli avec des petites traces de cuir puis en toute fin, l’on retrouve de faibles notes herbeuses asséchantes (foin). Post-goût moyen-long et sec, assez aigre (aussi acide que sûr) de levures sauvages fruitées (zeste de citron, pelures de pommes, traces de moût de raisins) aux petites notes terreuses et herbeuses.

A true classic gueze, worthy of it’s reputation. This a refined but funky gueze that I could drink and drink. Very lightly carbonated, small head which dissipates into nothing quickly.. Aromas are funky soggy cut grass.. Tastes sour but refreshing,

Lovely citric attack on the nose. Cork is also full of vinegar notes. Mouth is chock full of wonderful but quickly fading coarse citrusy tastes...

Cider like aromas while pouring from a couple feet away. Clear gold. Green apple, dust, dried apple, some hay. Complex, smooth, and very balanced.

750ml bottle poured a light cloudy yellow color with aromas of musk, dust, light apples, and some earth. Flavors are the same, light vinegar, earthy notes, decent beer overall, glad a I have a few more of this bottles laying around.

Pours a cloudy light orange with little head that falls quickly with no or little lacing. Aroma of funk, hay, light horse blanket. Taste is funky, sour, hay motes with some lemon tartness, light oak. Medium carbonation with low mouthfeel. A good classic gueuze but i would take 3F, tilquin or girardin over this one any time.

Poured into a snifter. Orange with a slight white head. Smells of slight vinegar and apple. Taste is super sour apple and again with the vinegar... Very dry finished. Solid.

75cl consumed at the Delirium Cafe, pours up with a crystal clear gold body and supporting a lasting white head of foam. The modest aroma offers up soft vinegar, some apple juice sweetened apple skins and a bit of earthy basement. The taste is pretty bold in vinegar sourness and acidic like tartness. I get some lemon and lime acidity mixing with sweetened and soft sour vinegar notes. It gets mighty dry to midway and into the finish where it is more puckering than anything else.
