COMMERCIAL DESCRIPTION
The world's classic Gueuze. A blend of one, two, and three year-old lambics creates a second fermentation in the bottle. The champagne of Belgium. In contrast, the Lou Pepe Gueuze is a blend of three 2-year-old lambics.

Newer vintages are labeled "Organic Gueuze", "100% Lambic Bio" or "Classic Gueuze".

375 ml bottle at Waterhuis aan de Bierkant in Gent. Hazy straw with small white head, poor retention. Sour aroma: lemons, hay, green apples. Taste is very sour: concentrated lemon juice, lactic acid, green grapes. A little too extreme for me.

Bottle shared with mom. Pours Pale yellow with a thin white head. Aroma is sour, tart, citrus. Taste is the same, with a vingegar pleasnt felling. very good!

Hazy, straw color and small head. Medium intensive aroma of sourness, acid apple, wheat and horse blanket. Taste is minimal sweet, medium to heavy sour and medium to heavy dry. High carbonation. Medium body. Very refreshing, sour and well balanced gueze. Very good stuff.

UPDATED: JUN 5, 2015 1e Cantillon, die ik proef, Gueuze 100% Lambic Bio, uitgeschonken in Cantillon degusteer glaasje. Goudgele, honingachtige iets troebele kleur, met kleine en dunne witte schuimkraag die snel wegtrekt, een dunne ring van schuim blijft op het bier drijven. De geur is bijzonder, witte wijnachtig, bierkelder/barnyard, hooi, citroengras, zelfs ook kaasachtige aroma's. De smaak is complex, de eerste tonen zijn behoorlijk zuur en kort daarop vrij bitter. Door de behoorlijke carbonatie heeft het iets weg van brut champagne, maar dan met meer zuur en bitter erin. Tonen van citrusfruit; citroen, limoen en grapefruit. Witte wijnazijn en wat houtige tonen, met een zeer droge en subtiel bittere hopfinish. Fraai en erg mooi gebalanceerd Gueuze Lambic bier, ik ben benieuwd naar de andere Cantillon varianten die ik ook nog in het wijnrek heb liggen. De Gueuze blijft een bijzondere biersoort en deze Cantillon is een perfecte keuze voor de liefhebber van deze artisanale bieren. Een bezoek aan de brouwerij staat zeker ook op de planning als ik in Brussel ben.

37.5cl bottle. Hazy pale yellow colour with a thin white head. Sour, brett and acid citrus in the aroma. Average carbonation and medium body. Taste is a multi layered experience with tart notes and some acid feeling. Overall, a good lambic.
