 375ml bottle at Bistro L’Autre Oeil. Pours clear golden with a shy white head. Subtle barnyard, funky, dusty, earthy and lemony aroma. Taste is sour, tart, green apples, lemon, grapes, vinegar, old cheese and oak. Thin body with a long dry sour finish.

on tap at brouwers zwanze day ’13. Flat orange cloudy pour. Aroma of pungent vinegar, body odor, kombucha lemons. Tastes strongly of vitamins. some grassyness apricots yeast minerals shrimp. Coats the mouth with yeasty residue. Need something like bread to eat alongside to balance it out.

Bottle at Monks Cafe in Philly. Have had several times here on draft, along with multiple other Cantillon varieties, but never the classic in a bottle. Feb 2013 dated bottle. Cantillon seems now way overhyped, but a fresh taste of the classic blend quickly makes you realize it’s not hype at all. Full and balanced. Perfectly blended sour. Deep amber fruit flavors. Palate is extraordinary. This is definitely the Gueze standard.

So glad to finally open this one. 2011 bottle split over a horror movie. Aroma is starfruit, kiwi skin, lemon peel, and rubber funk. Pours hazy blond with a nice looking swirling film. Taste is great with some tart citrus, startfruit, mineral, slight bandaid funk and a lemon peel as it warms. Complex and wonderful without being intense.

Bottle: 2011... thanks, Mike! Perfect copper color with great clarity as it settles; the foamy white head escapes quickly and leaves a few small lacing rings at the top of the glass. Aroma is ripe, green apple skins, lemon acidity, sour white grapes, vinous oak notes, funky barnyard floor, sweaty horse funk, piles of wet hay & wood, and even what I’d call sweaty feet. Mild cheesy notes, too. Sounds strange, but it’s fantastic. So tart & funky. Taste is the same with with sharp acidity up front, tart like a gueuze should be. Lemon, wet oak barrel notes, barnyard, stone fruits, horseblanket, damp cellar floor, vinous white grapes, mild white wine vinegar, and some more cheesy & sweaty feet. Ripping dry finish. One of the finest original gueuze around.

Bottle at Monks Cafe, dated February 2013 (8 months old).
Appearance: Hazy straw to amber body with a short white head that quickly disappears.
Aroma: Wow, barnyard, lemon, earthy straw, very complex. Light sweetness with tart.
Taste: Light tart on the intro, very mild, mellows moreso into lemon peel finish with straw and leather complementing it.
Palate: Light-Medium bodied with high carbonation.
Overall: Nice! Balanced but has good flavor. Enjoyable, mild, I was expecting more tartness.

Sample from a 750ml bottle, the last pour. 2012 vintage. Totally hazy orange yellow color. Good thin off-white head. Great lemon, apricot tart fruit flavors, light funk. Lighter body. Smooth, crisp lighter carbonation, kind of sticky in the finish. Very light pepper. Moderate to bigger tart taste, light sweet. Delicious complex, very well balanced geuze.

Appearance: Hazy pale golden color with a small white fine head.
Aroma: Acidic apple.
Palate: Medium body. Acidic and a bit dry. Average carbonation.
Taste: Apple, acidic and a fine sourness.
Overall impression: Refreshing and tasty stuff.

Bottle: 2013. Nose is beautiful, fresh green apples, wheat, horse blanket, slight peach. Appearance is golden. Taste is vinous and deeply sour, green apples, leading to almost resin and blue cheese taste. Finish is tart and dry. Mouthfeel is slick and lively.
A beautiful example.
