Commercial Description:
The world's classic Gueuze. A blend of one, two, and three year-old lambics creates a second fermentation in the bottle. The champagne of Belgium. In contrast, the Lou Pepe Gueuze is a blend of three 2-year-old lambics.

Newer vintages are labeled "Organic Gueuze", "100% Lambic Bio" or "Classic Gueuze".

Tasted at Cantillon on 9/10/06. Poured into Cantillon labeled snifter from 75cL bottle, huge waves of sournes, more so than I’ve experienced with the Gueuze before. So much complexity, words cannot do it justice.

75cl bottle. Sour, fresh, earhty, vinegar, fruity, soft, lasting end, woody oak, spicy, complex! Hard to swallow - but slowly you appreciate it! Different & complex! Rerating May 09: Smooth, sour, tart, spicy, dry. A classic!

corked and capped 375ml. hazy light gold with 2 finger frothy head that quickly dissolved. nice lacing througout. aroma was of some great farmy funk with sour apples, yeast and light vinegar. taste was light and crisp with a sharp sour apple taste at first that molded into a tart sour vinegar finish. very well balanced with a refreshing crispness and a light mouthfeel. mellows a bit as it warms.

Bottled. Beer is clear, light, bright brassy gold with a tiny, white, frothy, rapidly and totally diminishing head.
Immediately the sour funkiness of the aroma reaches up from the table to tickle my nose and make my mouth water. Malty with a light note of toasted grain, trace of caramel sweetness; Hoppy with a light bitter grassy herbal note, light note of lemon zest; Heavily yeasty with fat notes of sour barnyard, lesser note of dusty attic; Light note of mineral/wet stone, trace of spicy wood.
The flavor is lightly bitter, moderately-to-heavily acidic, trace sweet with a long, lightly sweet, moderately acidic/citric finish.
The body is light, the texture is watery and the carbonation is soft.
Plenty of prickly goodness, not outrageously complex.

Bottle @ Cantillon. Large fizzy white head that mostly diminished. Good lacing. Light cloudy golden colour. Aroma was lovely dusty, barnyard (or like the Cantillon building aroma), tart like notes with hint of champagne, unripe fruit, vinegar, leather. Medium bodied with a soft carbonation and heavy dry texture. Moderated sour notes, hint of sweetness maybe from the younger lambic that was blended in. Light dry and sour finish. This was the way to experience the Cantillon brew. Belgium 25-05-2007

375 mL corked and capped bottle purchased at Liquor Max. Pours sparkling gold with a small fizzy white head, somewhat diminishing, spare lacing. Aroma is average malt (straw, meal), average hops (grass, flowers), average yeast (barnyard, earth) with notes of grapes, green apples and cask. Light bodied, fizzy texture, lively carbonation and a bitter finish. Short duration, light sweetness, heavy acidity and bitterness; fragrant tart green fruit flavor with notes of straw malt.

Trade from Ross, thanks man! Pours a rich orange color with white bubbly head that fades quickly. Very effervescent like champagne, the brewer makes the same comparison on the label and he’s 100% correct. Aroma is very sour with a slight aroma of burnt plastic, some slight apple and citrus notes which play beautifully with the intense sourness. Taste is amazing with light apple and citrus flavors, mustiness, and wood notes. Very sour with with light tartness, this beer is completely well balanced and very complex. Damn I love Cantillon.
