4.4 AROMA 10/10 APPEARANCE 4/5 TASTE 8/10 PALATE 4/5 OVERALL 18/20
Hazy, dull hay. 1.5+ (bubbly white) fingernail head on medium pour. Smells of lemon zest, old musty hay, barnyard funk, and touch of unripe fruit. Crisp and refreshing from the start. Distinct citrus sharpness is present all throughout - not overpowering, but balanced by barnyard must, touch of oak, and dry dustiness. Very refreshing!

4.4 AROMA 9/10 APPEARANCE 4/5 TASTE 9/10 PALATE 5/5 OVERALL 17/20
UPDATED: APR 5, 2013 750ml bottle at Akkurat in Stockholm. Bottled in 2005, stored at Cantillon until release in 2010.
early pour: lightly hazed gold, and more opaque than expected with a first pour. honey, lemon juice, musty floral perfume and minerals, all ridiculously well-integrated and harmonious. medium-light creamy body with expectionally soft and delicate natural carbonation. yeast provides an unbaked dough and mild sulfur quality. strong, vibrant acid but perfectly suited for the carbonation and body.
mid pour: lemon juice and honey dominate, while dry, musty goat / horse hair, dust and dried hay grow. sharper acid is almost vinegar-like with more yeast present, and chalkiness and saltiness increase as well.
late pour: muddy but bright golden body. heavy mustiness with notes of paint and antacid calcium carbonate mute the expressive lemon / honey / wheat flavor. acid is stronger late.
the verdict: most expressive early to middle of the bottle. wonderful play of flavors, body, acid and carbonation. seems to have developed spectacularly over 7 years in the bottle.

4.3 AROMA 9/10 APPEARANCE 4/5 TASTE 9/10 PALATE 4/5 OVERALL 17/20
(Bottle) Pours hazy golden with a medium sized, off-white bead. The aroma is mega funky with notes of horse blanket, mouldy basement and barnyard brett up front alongside clear lacto notes. Also boat loads of citrus (grapefruit and lemon), elder, sweaty cheese, phenols (smoked meat) and subtle spices. Touch of pineapple. The flavour is dry, medium to heavily acidic and tiny bitter with notes of brett, lacto, citrus, cheese, wheat, white bread and phenols. The mouthfeel is soft and tart with a light to medium carbonation. Citric, funky and wheaty finish. Light to medium bodied.

Bottled at Akkurat. Stockholm. Hazy golden, brief lively head. Citric nose with plenty of barnyard. Acidic with lots of juicy lemon. Fairly light bodied with spritzy mouthfeel. Citric acid is prominent, mild salty bitterness. Alive and refreshing. Very elegant.

4.2 AROMA 9/10 APPEARANCE 4/5 TASTE 9/10 PALATE 4/5 OVERALL 16/20
Bottle at Akkurat. Bright golden color, medium white head. Aroma of dusty pink grapefruit with some floral notes. Sourness is much softer than the usual Cantillon, with grapefruit, apple and wet socks. Very easy to drink.

4.2 AROMA 8/10 APPEARANCE 5/5 TASTE 8/10 PALATE 4/5 OVERALL 17/20
Hazy gold, wispy white head that becomes a thin ring. Nose is dusty and peppery, light peach and citrus before brett dominates, bit eggy. Flavor is more Cantillon brett-forward lambic, funky with heavy citrus and light peach, some pineapple emerging amid the stinging carbonation that accompanies the leathery finish. Very pleasant and nicely complex, though brett-harsh and somewhat all over the place.
