COMMERCIAL DESCRIPTION
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

Pours semi clear peach with a very low white head. Aromas of white currants, peach, apricot, grass. Taste is fruity and floral with some herbal notes. Mouthfeel is dry and tart with medium carbonation.

Tap at Birreria Volo, and sometimes Volo. Pours like a nice scotch, a beer with legs, shocking for a 5%er. The palate is extremely smooth, seems to dissolve into your tongue. Some cheesy hops but also with lots of herbal hops. Dry as a bone and sour as you would expect, what a treat!

75cl bottle. Hazy amber orange with small white head. Funk, barnyard, floral, citrus and ripe plum and peach in the aroma. Soft carbonation and medium to light body. Taste is sour and bitter with fruity notes to balance. Some acidity towards the finish. Overall, a good beer.

Bottle. Hazy copper color with a thin frothy off-white head. Acidic aroma of apricot, apple and oak. Acidic, sour, dry taste. Medium thin body.

Bottle. Brewdog, Sheffield. Latest release. Bit of a gloopy pour. In the glass, it’s a hazy pink, orangey amber. Slim halo of white head. Nose has very ripe, on the turn and almost fermenting, stone fruit. Lots of plum and peach. Damp grain. Damp wood. Wet leaves. Some cellar funkiness. Further notes of baked apple and toffee. Smells fantastic. Taste is light, apple cider vinegar tart. Pretty dry, although there’s some of the stone fruit sweetness on the lips. Mouthfeel is a bit odd, in that it’s dry and light, but also feels a bit gloopy. Not sure I can explain that one. Finishes long, tart, and slightly acidic, with some hop bitterness. Very nice.

Bottle. Slightly hazy, red orange in colour, no head. Aroma of horse blanket, floral, citrus and ripe fruits and vinegar. In taste tart, fruity, very dry with oaky aftertaste. Medium body, oily texture, high carbonation, lightly bitter with medium to high sourness. Excellent.

Bardzo przyjemny lambic, sporo to wytrawnego, białego wina, dużo białych owoców, nieco miodu, orzeźwiające i niezakwaszające, podobne nuty występują zarówno w smaku jak i w aromacie. W kolorze bursztynowe, zawiesiste, ze średnią pianą, smaczne. Pite zaledwie po półrocznym leżakowaniu, być może jeszcze nie do końca ułożone, ale już bardzo dobre
