COMMERCIAL DESCRIPTION
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

75cl bottle shared with Kermis and another friend. Thanks Kermis! No head/carbonation. Hazy deep golden colour. Sour aftertaste. I’m new to geuzes. I will have to re-rate this later

UPDATED: AUG 5, 2011 2010 Vintage bottle@WoSF 2011: hazy yellow with a very lasting white head, smells like sour with wet hops & yeast, taste is sour with wheat, barnyard funk, yeast, brett, horse blanket, tart hop, medium body but bit heavier than other Cantillon’s, medium carbonation, amazing beer///// 2007 Vintage bottle@Delirium, sampled, similar taste only it seems to have gotten a lot stronger and less subtle, way more in your face in everyway, more tart than sour now, both version are excellent

Bouteille de 750ml. Bière cuivrée-orangée avec une mousse blanche très durable. Le nez est bien agréable avec des arômes de houblons à saveurs d’agrumes et de levure sauvage. La bouche est agréable, l’amertume en finale est bien marqué, les goûts de pamplemousse provenant des houblons du houblonnage à froid sont prononcés. Franchement une très bonne bière.

(75 cl, vintage 2007) Le liquide a une robe orangée qui demeure embrouillée. La tête mousseuse d’emblée épaisse disparaît en un clin d’œil. Au nez, des parfums de levure spontanée se frottent à des effluves de barrique et à des fruits légèrement coupants. Au fil de la dégustation, des arômes de fleurs semblent se détacher. Les saveurs sont très belles, justement aigres, parfaitement acidulées, légèrement grimaçantes, bien asséchantes: une explosion de notes surettes et boisées attaquées par de bons microbes belges. Trop facile à boire. En bouche, le liquide a un corps moyen qui est traversé par des bulles fines et vitaminées. La finale se fait sur des notes vives qui se combinent à une amertume presque fantomatique. Un délice.

Bottle. Pours a cloudy light bronze with a rocky cream coloured head. Huge funky aromas with some acidity, Light floral and citrus aromas which I guess are coming from the hops. Flavours show great acidity and plenty of the funk. Some hops on the finish.Not my favourite Cantillon but still a bloody great beer.

Pours hazy orange with a white head. Aroma is the typical cantillon aroma with notes of vinegar. Taste is heavy sour with a very dry finish. Body is medium, texture is thin, carbonation is soft.

2007 vintage generously shared by Huhzubendah to help me finish off both the top Belgian list and the top Unblended Lambic list. Served in a tulip. Pours copper with a very, very large off-white head with really good retention. The nose is pretty interesting with some slight funk and a few floral notes. There’s a bit of acidity there as well. Mild earth. The taste takes this to the next level. There is a light acidic presence with some notes of light stone fruits plus some damp earth and general musk. Body is fairly light and low in carbonation. Finish is tart, yet not too bracing. Quite drinkable. Thanks again, Matt! Serving type: bottle Reviewed on: 02-14-2011
