Commercial Description:
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

I’ve seen this beer before and wanted to try it but Cantillon 750’s are a little pricey $15-$25. Luckily I found this in a 375ml for $10 and who really needs more than 375ml of lambic or gueuze? The label read vintage 2005 and the cork read 2007 so three years old now. The cork was pretty disgusting, beginning to rot with a gross black liquid bubbling out of the cracks! Oddly, this did not deter me and seemed sort of normal...Anyway it looks like a gueuze, golden orange hardly any bubbles. It smells nice, fruity and malty with a slight earthiness. The flavor is bitingly sour, dry finish, dusty grapes, I think I taste hops? Serving type: bottle Reviewed on: 08-30-2008 02:14:10

Bottle shared by Anker. Hazy golden body with a medium white head. Aroma is hay, dust, sour and hints of banana. Flavor is sour, dry, dust, cellar and citrus. A great lambic.

Bottle. Pours an hazy golden colour, with a small beige head. Aroma i typical Cantillon, hay, citrus and "old dusty cellar" with hints of banana. Flavor is lovely, pleasant bitter dry citrus at first, then a little dusty fruit and pine, ending in a nice bitter finish. Great unblend!

Draft at Max’s Belgian fest. Big apple and floral aromas. Taste apple flavors. Slight vinegar. Great lambic.

Cap and cork, 2005. Golden pour with a white head. Smells amazing. Oak, hops, yeast, hay, bread, cheese, citrus. Full and superbly clean nose. Flavor is all sour and tart - pithy lemon, under ripe banana, lightest hops. A little watery on the palate. One of the better smelling lambics I’ve ever had.

37,5 cl bottle. 22MAR07 bottled. Very nice bitterness from the hops. Ties to the gueuze-family are clear, especially at the start of every sip. The bitter aftertaste is amazing. A unique beer.

2005 bottle. Pours a hazy orange/yellow, fizzy white head. Fruity, grass, honey, funky leather, and a nice biting sourness. Tart green apples, lemon zest, and hay. Very nice.

75cl, vintage 2004 @ Old Bank, Turku. Attractive orangey amber with small pale head. Lovely exotic fruity hops aroma with fresh cut grass, honey and little funk. Great sweet and sour mix, can’t belive the hops are so complex and fresh after over four years. Flavor is classic mind puzzling tartness with exotic fruits and grass. Passion fruity, acidic finish with lingering barnyard sourness. Yeast smoothens things down a bit. Medium bodied, round mouthfilling carbonation. Just blew me away.
