COMMERCIAL DESCRIPTION
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

Iris 2007 bought from Beermerchants consumed at home. Slightly hazy golden copper colour. Very acidy, funky; hoppy like a double IPA and fruity too. Incredibly sour too. Good stuff but prefer other Cantillons to this. Fantastic beer though.

Bottle from Beermerchants.com. I’ve had this in the cellar (well, under the stairs) since last summer. With dear old Blighty’s weather starting to behave like spring I thought the time has come to crack this open. Slightly hazy-amber pour with a white head. Musty aromas of wet grass, some citrus, cheese, heather. Crisp flavours of lemon peel, grapefruit, pineapple, lime. Very well balanced sweet/sour action. Dry, fruity mouthfeel. Very dry, acetic finish. By jove, I don’t think i’ve found a below excellent Cantillon brew yet, hats off to them!

Pours opaque murky dark orange with a huge egg shaped head that builds constantly. Aroma of tart funky sourness, oak, fruit, herb, vinegar. Taste is sour grapefruit, very sour. Medium body, soft carbonation. Dry finish, nice balance of sweetness but definitely incredibly sour.

Pours a cloudy amber color with a white head that vanishes except for the rim. Aroma is sour, with funk, earth and lemon. Flavor is earthy, tart, touch of hops, and barnyard funk. Delicious!!!

2004 Vintage, 375 mL bottle. Pours hazy orange with about 3 bubbles from a vigorous pour. Aroma was a fantastic combination of lavender, perfume, honey, lemon and grapefruit. Incredibly complex aroma that was even better as you drank. This was incredibly tart that made my cheeks pucker in a good way, yet this had a unique fruity hop finish to complement the sourness. Virtually no carb, and the finish is a great dry bitterness on the tongue. Fantastic beer that has held up well and could go many more years.

Small bottle. pour is cloudy yellow with thin white head. Aroma is funk, tart, light earthy malt and light floral notes. Flavor also tart and funky with deep, rich lambic flavors. Great stuff.

Bottle, labelled "Iris 2003". Pours deep, slightly cloudy amber with no head. Stable aroma. Sour prickly flavour gives way to a nice bitter aftertaste. Brilliant.
