COMMERCIAL DESCRIPTION
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

Cloudy orange, nice white head. Smells of lemon, dust, funk. Very lemony flavor, with notes of vinegar and dust. dry finish. Very tasty.

Pours cloudy amber with an off-white head. Aroma is tart, burnt rubber, leather, pine and light sweathy socks. Flavour is tart, burnt rubber, pine, light grass and grapefruit.

Bottle. A quite sour aroma, fruity, a soft hidden sweetness. The large white fizzy head gets fast smaller. The body is dark orange. The taste starts sour, then it gets mild. The body is fizzy, the finish is dry. A very nice beer.

Pours an orange/yellow colour with no head, even if poured fairly aggressively. The aroma is earthy, a little vinegary an like sweaty, spicy onions. The flavor is very sweaty, earthy, fruity and spicy. Onions, lemon, flowers, peach, vinegar, horse blanket and spice. A long bitter finish. I like this, but it just seems a little out of balance. I think another 6 months would do this some good.

750ml green bottle, corked and capped. Amber coloured liquid, cloudy. Not much of a head, what is there fades away quickly to a few surface bubbles. No lace. Nose has a light leathery component to it with a lemony, tart edge. Flavour has some sweat, brett, tart grapes. Tart and citrusy finish, acidic and dry. Medium bodied, low carboantion. Consumed outside on a warm, sunny spring day.

From the bottle at PP belgian fest. Hazy golden color with a thin white head. Aromas of barnyard earthy funkiness and floral notes. Moderate tartness and sourness. Very interesting grassy, citrus flavors yes with understated hop qualities.Finish leaves you wanting more. Awesome.

2004 bottle, 75cl. hazy gold with a small white head. Super crazy Cantillon funk with lots of wild yeast and lemon character. And a touch of hops if my nose doesn’t deceive me. The flavor has a huge lactic sourness with a smooth lemon-lime character and balanced wild yeast funk and a bone-dry finish. Carbonation is a little spritzy but not huge. This just blew me away with how harmonious the funk and acidity was, with every edge smoothed out. The hops have perhaps faded past recognition in the past six years, but this stuff is prime right now.

Vintage 2006. Consumed March 2010. A copper color beer with a very big head. The aroma is very sour, very funky, fruity-apples & other fruit. The taste is sour, apples, wood, citrus, very tart dryness on the palate. Almost like a sour apple juice-very nice. I only wish I had picked up more bottles of this lovely stuff.
