Cantillon Iris

7/18/05 750ml. bottled 2000. Hazy amber with small off white head. Sour vinegary aroma. Nice tart taste but much less acidic than other Cantillons. Mellowed and I think better balanced than some of the other basic Cantillons.

375 ml. bottle; 2004 vintage bottled in 2006. Earthy sour aroma. Hazy orange apricot color with a white head that really left rapidly. Thin to medium bodied with very mild carbonation. The flavor is lambic sour. A bit like earthy green apple. Pineapple? The finish is dry and sour and bitter. Changes from sip to sip. The finish is lactic, and fruity. Something like sucking on a lime peel. Problem: It is what it is, and coming up with what it is not to describe it doesn’t work. Good stuff. Very good stuff.

The blonde of lambics. Iris, Iris, fair and graceful in your looks. The smell of the earth, a pleasant mouthfeel. The taste of sweet apple not harsh. A work of art not to punch a hole through.

Light orange with small white head. Sour aroma with wood, hay and apple. Not that sour flavor for a Cantillon. Lacks bite but nice balance.

2004 vintage. Rich orange color. Massive sour nose with a healthy dose of funk. The sourness of the body did not disappoint after such a wonderful nose. Slightly bitter finish. A wonderful beer.

Draught. Amber color, slight reddish mahogany. Aroma is pungent, wine-like, sour grapes, straw. Vinous and sour, some acidity and hints of wood flavor. Some fruit. Kind of dry. Decent.

Predictably awesome like everything Cantillon produces. Sour, barnyard aroma, acidic, and promising a sour flavor that I’m anxious for. Very light sugar in the flavor, more mostly sour, and abundant Belgian yeast giving a barnyard and horseblanket character. Cloudy orange color.

2005 Bottle. Complex nose is malty at first followed by acidic. A still, mostly clear dark gold-amber with a minor head around the edge of the glass. Well balanced acidity, light at the fron to fhte palate and strong in the back. Very light mouthfeel.
