Commercial Description:
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

2005 Bottle. Complex nose is malty at first followed by acidic. A still, mostly clear dark gold-amber with a minor head around the edge of the glass. Well balanced acidity, light at the fron to fhte palate and strong in the back. Very light mouthfeel.

2004 vintage Pours a nice golden orangish brown. Very spicy fruity delicious nose. Super tart fruity flavor. Not much to say, but this is unbelievably good lambic, and being unblended, this is fan-fricking tastic!

750 Ml bottled in 2005 - So the beer went into the bottle 2003. Consumed august 2007. Poured into a Hoegaarden glass. The color is a deep orange, quite hazy. No head. Aroma is quite complex - the obvious part is the sourness and a drying hoppiness. There is a beautiful tartness and fruitiness that reminds me of apricots. The flavor is a match for the aroma. The apricots is there with a dry hoppiness in the finish. I’m struggling to detect the fresh hops, but it has been two years in the bottle. The finish is actually sweet under the hoppy dryness. A really beautiful beer.

Bottle cap & corked from Dilly Deli. Poured hazy yellow color with an minimal frothy off-white head that mostly lasted with fair lacing. Moderate sour yeasty raw wet woody aroma. Light to medium body. Medium sour citrus flavor with a medium bitter finish of moderated duration. This is a standout for style beer.

From bottle at Tria, poured a light clear rose color with very little head. Nice tangy flavor with a lasting aftertaste.

9/12/2007: Cantillon Iris is deep gold to amber in color and has a dense, foamy and frothy head that lasts for quite some time. The musty, slightly acidic and sour aroma is quite alluring and also presents some distant oakiness. The flavor begins sweet and then becomes more sour toward the end (kind of like Brie or a similar cheese does). The flavor is acidic and sour and contains some oak, mustiness, and a tart (slightly puckering) finish. This beer is dense and feels creamy and smooth in the mouth. Overall it is quite unique and very good!

Pours light hazy amber color with a tiny white head. Aroma is musty, sour, with some fruit. flavor is sour fruit, earthy, with a long bitter finish.

375ml bottle (Pikkulintu, Helsinki, Lambic days 2007) Exceptionally sharp sour aroma. Orange colour, almost no head Exceptionally sharp and sour taste too, but quite pleasing. Some apple cider, some oaky wood. Grape seeds.
